🎃🍂 Sugar pumpkins are sweet, nutty, and so much more than a fall decoration. They're perfect for purées, pies, and even roasting the seeds. We love stuffing them to create an edible tablescape that's as festive as it is delicious. ✨🍽️

Prep Time: 15 minutes
Cook Time: 45 minutes
Servings: 2

Ingredients
• 1 sugar pie pumpkin (top cut off and reserved, seeds removed)
• 1 (8.8 oz.) package Uncle Ben's Ready Rice Wild Rice
• 4 oz. spicy chicken sausage
• 1/2 cup bell peppers, diced
• 1/4 cup parsley, chopped
• 1/4 cup marinara sauce
• 1/4 cup chicken broth
• 1/8 tsp cumin
• 2 tsp olive oil
• 1/8 tsp black pepper
• 1/8 tsp salt
• Aluminum foil

Instructions
- Rub the inside of the seeded pumpkin with olive oil and black pepper.
- Wrap the pumpkin with aluminum foil, leaving the opening exposed.
- Roast the wrapped pumpkin and pumpkin top at 350°F for 30 minutes.
- While the pumpkin is roasting, brown and crumble the sausage, then let it cool.
- Combine the sausage, rice, bell peppers, parsley, marinara sauce, chicken broth, and cumin. Mix well and add salt to taste.
- Stuff the pre-roasted pumpkin with the rice mixture. Return the foil-wrapped pumpkin to the oven and bake for an additional 15 minutes (do not bake the top).

💡 Tip: If a fork easily pierces the pumpkin skin, it's ready. The entire pumpkin shell is edible! 🎃😋🍁

🍂🎃 Delicata squash is a perfect example of the flavors of fall. Sweet and delicate, it's the perfect time of year to roast it, stir-fry it, or even air-fry it. Follow along and enjoy the flavors of fall with this simple and delicious recipe!

Prep Time: 5 minutes
Cook Time: 15 minutes
Servings: 2

Ingredients:
• 1 delicata squash, seeded and scooped out (6-8 inches long)
• 2 tbsp olive oil
• 1/2 cup seasoned panko breadcrumbs
• 3 tbsp grated Parmesan cheese

Equipment Needed: Air fryer

Instructions:
- Preheat the air fryer to 400°F.
- Cut the delicata squash into ¼-inch crescent moon slices.
- Combine the breadcrumbs and Parmesan cheese in a shallow bowl.
- Dip the squash slices in the olive oil.
- Coat both sides of the squash slices in the breadcrumb mixture.
- Air fry at 400°F for 15 minutes, or until golden brown and crispy.
- Serve with your favorite dipping sauce and enjoy! 🎃✨🍁

Pumpkin Spice Tres Leches brings together the flavors of Hispanic Heritage Month and pumpkin season in one delicious dessert. 🎃🍂 Rich, creamy, and full of fall flavor, it's a recipe we highly recommend. Follow along below! ✨

Prep Time: 10 minutes
Cook Time: 25-35 minutes
Cool Time: 1 hour
Servings: 8

Cake Ingredients:
• 1 (16.25 oz.) box white cake mix
• 3 eggs
• 1 cup water
• 1/4 cup olive oil
• 1 1/2 cups pumpkin purée
• 1 tbsp pumpkin spice

Tres Leches Mixture:
• 1 cup condensed milk
• 1 cup evaporated milk
• 1 cup heavy cream
• 1 tsp cinnamon
• 1 1/2 tsp pumpkin spice

Instructions:
- Prepare the cake according to the package directions.
- Add the pumpkin purée and pumpkin spice, then mix until smooth.
- Bake at 350°F for 25-35 minutes, or until cooked through.
- Let the cake cool, then use a skewer or knife to poke holes throughout the cake.
- Combine all tres leches ingredients and pour over the cooled cake. Refrigerate for 30 minutes to allow the liquid to absorb.
-Top with fresh whipped cream, if desired. 😋
