Proud to call the Catskills our home, and proud to be featured in the 2026-27 edition of Pure Catskills!
From our beginnings in 1980 as a small dairy farm to becoming part of the vibrant Catskills food community, Catskill Wagyu at Hilltop Farm has always been rooted in care for our animals, our land, and our neighbors.
Since 2011, we’ve been raising purebred Wagyu in a closed herd, meaning every animal is bred, born, and raised right here on our farm. Our cattle spend their lives under open skies, nourished by the hay we grow, and raised using sustainable practices that support both environmental and community health.
The result? A truly Hudson Valley product Wagyu beef that’s buttery, richly flavorful, and incredibly tender.
In addition to our beef, we offer seasonal pastured chicken and raise a small flock of heritage American Bresse chickens, known for their exceptional eggs and meat. And we’re excited to share that our microdairy featuring our beloved Holsteins is opening soon, bringing us back to our roots.
We love connecting with our community whether through farm tours (by appointment), sharing our practices, or welcoming summer apprentices through the Anne Saxelby Legacy Fund.
