I made a special sugar free cake for my parent's 40th anniversary. It looks a sight better than my first sugar free attempt 2 and a half years ago! I used a cake mix this time, and added heavy cream to the batter. The icing is a dark chocolate ganache with sugar free gourmet chips. The ganache cracked in the fridge while cooling, but I decorated it with red roses to stand for their Ruby anniversary.

My husband's 40th birthday cake. It was a dark chocolate chili jalapeno cake. The cake has a cayenne pepper kick and the top is covered with a cool jalapeno chocolate ganache with buttercream accents. The flavor is deep and the chocolate pairs well with the cool green tasting jalapeno kick. It's not overwhelming. Even my kids liked it!

Assyrian spinach pies, and homemade falafel. The pie crust is a yeast bread with mahlab and flax seeds. The filling for the pies is an amazing mix of toasted walnuts, spinach, dried cherries, onions, feta, lemon juice, and olive oil. The pitas are filled with falafel, which is a mixture of chickpeas and spices, fried, and tomatoes, lettuce, cucumbers, purple onions, and yogurt sauce. I love making Easter sweet breads from other countries! This year I decided to try a Greek tsoureki ring. Like the Italian Easter ring, this bread has hard boiled eggs cooked into it. I ordered the integral ingredient, mahlab, from a Turkish grocery in Fort Worth. Mahlab is a special ground cherry pit from a plant that only grows in Greece. The flavor is somewhat cherry and almond. So incredibly delicious! When it came out of the oven, I brushed on a honey glaze.

The dark red eggs symbolize Christ's sacrifice. The three stranded braid represents the trinity, and the rising of the loaf represents his resurrection. I love this so much! The symbolism of the bread is beautiful and the flavor is so unusual. Now that I have mahlab, I will be looking forward to more Greek and Turkish recipies.

Anyone else stress baking? Nothing calms my nerves like getting my hands in some dough and eating the finished product! Today my minions helped me. I let them work the butter into tiny chunks into the flour, mix lightly, and mold into circular loaves. Then I let them "paint" the dough with buttermilk and sprinkle with oats. They really loved the part where we cut a cross into the dough to "let the fairies out". Check out the recipe below and enjoy being Irish!

Happy Mardi Gras y'all!!!!! Yesterday I made my yearly king cake. For those of you who don't know what it is, a king cake is a sweet bread with cinnamon and a filling (this one is cream cheese) with royal icing in the Mardi Gras colors and sparkling sugar. As with the religious origins of Mardi Gras, the king cake represents the unity of Faith's, and is named after the three kings that searched for baby Jesus. The three colors are also symbolic of justice (purple), faith (green), and power (gold). The plastic baby represents baby Jesus and is hidden in the cake. Whoever gets the piece with the baby gets good luck and has to provide the king cake next year. My kids are all hoping to be the lucky ones! This year has been crazy with my parents moving here, but next year I will be selling these bad boys with different fillings.

I love trying cultural holiday breads! We came home from Christmas with lots of chopped pecans, so this special Rosca de Reyes (Three King's Bread) from Mexico seemed to hit the spot. Today is the day of Epiphany, when children in Mexico leave their shoes outside and receive presents from the three wise men. This is a sweet bread, very similar to my favorite King cake from Mardi Gras. The circular bread is supposed to represent a crown, with dried fruits and nuts inside. This was soft and rich, with a slight orange flavor and delightful pecan, craisin, and golden raisin filling.

Sometimes you just need random shaped and egg yolk painted sugar cookies. I let the kids raid my cookie cutters, and we used Pioneer Woman's sugar cookie recipe (recipe in comments). You actually tint egg yolks colors, and paint them on the raw dough before baking them. The colors are vibrant, and slightly citrus flavored dough keeps it's shape nicely. Finish with some royal icing for some "pow"!

I used some fresh pumpkin that I roasted in the oven to try out a new recipe for pumpkin pie with whole wheat crust. The crust's nuttiness from the white wheat flour perfectly complements the spicy pumpkin filling. I'm here to tell you that fresh roasted and mashed pumpkin is so buttery and much more flavorful than the canned version! I always take our leftover πŸŽƒ and blend their roasted flesh into mashed pumpkin that I use for pie, pumpkin bread, and pancakes.

I haven't been posting very much lately, but I decided to do a fall spin on my amazing cinnamon rolls and added pumpkin puree to the dough. It's a lovely light orange color and smells delicious! Not only does it add moistness to the texture, it's full of vitamin C and has more fiber from the vegetables. In our house, I sneak pumpkins and squash into my mac and cheese, and also throw them in pancakes. I'll let you know how they turn out!

So. After a full on year of perfect bread, the baking universe has decided to mess with me. Making my soaked wheat honey oat bread is an hours long process of soaking the wheat flour to unlock its helpful nutrients and increase its softness and sweet flavor. After the first proof (rise) I put the dough into the prepared pans and proofed them a second time in the oven. Literally one step away from completion (baking) I almost dropped the baking sheet and they all deflated instantly. Waaaa waaaaa....after reshaping and rising again, the loaves turned out flat and crispy, the result of over proofing. Well, I've decided to make lemonade out of my dad gum lemons (or in this case bread pudding). The results will be very much like the picture, only more nutritious with whole wheat bread instead of leftover biscuits. Stay tuned for pricing. And I can only sell them out of my home because cottage food laws prevent me from selling refrigerated items at the farmers market.

Oh my goodness!!!!! I wish that y'all could smell how good my new recipe smells baking!!!!! It smells like spicy gingerbread! These White Wheat Vanilla Chai bars are great for you! They are packed full of whole grain goodness and delicious spices--cinnamon, ginger, cardamom, cloves, white pepper, and orange zest. Even though I've taught dozens of bread lessons, and have kneaded bread at home with my own kids for years, I learned a new technique for kneading today πŸ˜‚. My 13 year old son with special needs (the one in the blue shirt) showed me the "ninja technique", which involves lots of whipping it on the table (with sound effects) and karate chopping. I guess that the weight of the bread being slapped on the table stretched it out sufficiently, because his bread was the most activated out of the bunch. The "gluten window" was achieved folks!!!

We learned how yeast works, why gluten development is important, how to knead by hand, how to read recipes, food safety in the kitchen, and why we use the ingredients that we do in bread and what their scientific properties are.
