Wild strawberries may not be gigantic, or ridiculously red like the supermarkets but their flavor is unparrelled, I've never tasted a better strawberry.

99.9% of wood aged spirits are aged on White Oak, and that just feels like way too much of one thing being done one way. Today I've begun my very own wood seasoning station. Red oak, peach and apple to start. These will season outside through 2 Maine summers and winters.. followed by a light toasting before being submerged in a neutral brandy barrel for another 2 years.

Found this gorgeous "Chaga" today while meandering through our birch grove after the rain. Chaga is a fungi that grows only on birch trees in cold climates and tastes like really earthy, foresty coffee when crushed and steeped with boiling water. I'm immediately dreaming about a birch sap syrup fermentation, distilled, aged on seasoned birch wood and Chaga to make the ultimate birch spirit. Time for some trials!
