Swallowtail Farm A small farm in NH growing nutrient dense wholesale vegetables and heritage breed broiler chickens. We raise our chickens for approximately 11 weeks.

Swallowtail Farm is a small agricultural farm located in the rolling hills of southern New Hampshire. David Lacasse and his wife, Linda practice Holistic Management to build healthy soils and steward their acreage. This management allows them to produce the best tasting, most nutrient dense food while enhancing their ecosystem and strengthening the local community. The farm is primarily focused on

fresh greens, with additional symbiotic operations including meat chickens.


​Our Chickens - FREEDOM RANGERS

Freedom Rangers are a heritage breed of chicken. They were once hugely popular in America, though they declined right along with the small farmer. Today they're making a comeback due to small flock owners (like us!). They're the do-everything bird: they lay exceptionally well, they're valued for their meat, they're extremely cold hardy, and hardy in general. They average between 5-8 lbs. They are all roosters which means they are slightly larger, meatier and more flavorful. The higher foraging activity of heritage chickens results in meat that's lower in fat and firmer in texture. We feed our chickens non-GMO grain. They are pasture raised which means they are put out in open fields to forage on their own. We also sprout grain daily which gives them more nutritious and nourishing supplemental feed. They sure do love the trays of sprouted grain!

Our second batch of chickens will be ready on Sunday June 25. You can pick them up at the house (11 Nye Rd, Acworth) fresh or frozen. They have been eating the nutrient-dense vegetables from the greenhouse and foraging on the Spring grass for 12 weeks. We have a large amount so stock up for your Summer barbecues! Today we are working on getting our minerals in the soil in the greenhouse. Lots of trace minerals. We are soaking our kale, lettuce, mustard, spinach and Asian greens seeds today so we can direct seed in the soil tomorrow. Also planting out beets and kale seedlings that we began in trays indoors. Garlic will go in too with fingers crossed for a good harvest this summer. It is our first time planting garlic in the greenhouse and in the Spring.

We are combing all the new seed catalogs to decide what vegetables we want to grow this year. We love food that challenges us visually and is different. Purple carrots, orange broccoli, striped tomatoes, purple sweet potatoes... so many choices! If we purchase quality seeds, add trace minerals to the soil, cover the soil, water well, observe for pests and plant distress, we can produce vegetables that have more nutrients in them. More nutrients keep our bodies and brains healthier. That's what we are all about!

We are Dave and Linda Lacasse who own a farm in southwestern NH. We specialize in growing nutrient dense vegetables for local restaurants and raising meat chickens for the general public. We raise Freedom Range Chickens. This is a heritage breed, pasture raised, non-vegetarian-fed, worm eating, bug scratching, no GMO Primal Whole chicken. This bird is raised how chickens are meant to live: outside, on grass, with room to forage. This might very well be “the best chicken in the world”, but surely will be the best chicken you ever had.

The taste is absolutely out of this world. Expect more dark meat, slightly more thigh and slightly less breast than your average factory bird. This slow growing breed takes twice as long as the factory farm version, resulting in impressive, rich flavor and a nutritional profile that simply does not compare with the store-bought alternatives.
