πŸ„ Mushroom Monday | Recipe of the Week

Seared Lion’s Mane Steaks β€” a mushroom thick enough to cut with a knife.

This is the one that converts people. Cut a lion’s mane into one-inch slabs, lay them in a hot cast iron, and press them down with a spatula or a second pan. That pressure is the whole technique β€” it drives out moisture and gives you a dense, meaty texture instead of a spongy one. Four or five minutes until golden, then flip and baste with butter, garlic, and thyme.

Season it generously. Serve it as the main, or slice it over polenta.

Golden Oyster Pasta β€” buttery, garlicky, and on the table in 25 minutes.

Golden oysters are the showiest thing we grow. Bright canary-yellow clusters, delicate caps, and a flavor that leans nutty and almost cashew-like when you brown them properly. They cook fast and they don't need much: butter, garlic, a pinch of chili, a splash of pasta water. That's the whole trick.

They're not one of our year-round three, so this is a limited run β€” they're in rotation this week only.

πŸ„ Saturday's harvest is almost ready! πŸ„

Here's a sneak peek at what's coming to the Acworth Farmers Market this Saturday, fresh-picked that morning:

🟀 Chestnut – nutty, slightly peppery, and they hold their crunch in a stir-fry
πŸ”΅ Blue Oyster – velvety and savory, perfect seared in butter
🟑 Golden Oyster – bright, delicate, and a little citrusy (limited supply!)
βšͺ Lion's Mane – tender, "crab-like" texture that makes amazing mushroom cakes

All grown indoors right here in Acworth and harvested Saturday morning so they're as fresh as it gets. Golden Oysters and Lion's Mane tend to go fast, so come early!

πŸ„ Mushroom Monday | Recipe of the Week

Simple Blue Oyster SautΓ© β€” 15 minutes, six ingredients, and the mushroom does all the work.

This is the one to learn first. Blue oysters crisp harder at the edges than anything else we grow, and a good sautΓ© is mostly about getting out of the way. Two rules: tear them by hand instead of slicing, and give them room in the pan. Crowd them and they steam instead of searing β€” work in batches if you have to. Then leave them alone for three or four minutes. That's where the golden edges come from.

Butter and garlic go in at the end, once the heat's down. Lemon and parsley right before it hits the plate.

πŸ„ Mushroom Monday | Recipe of the Week

Chestnut Mushroom Risotto β€” creamy rice, deep nutty mushroom flavor, and mushrooms that still have some bite left in them.

Here's why chestnuts are the right pick for a risotto: they're firm and dense, so they hold their shape through a long cook instead of going soft and disappearing into the rice. Sear them hard in a separate pan before you start the rice. Fold half in at the end and scatter the rest on top so you get both β€” flavor all the way through, texture on the plate. And don't throw out the stems. They stay crisp and they're the best part.
