Researchers at Edith Cowan University in Australia investigated whether or not people who regularly ate high quantities of nitrate-rich vegetables like leafy greens had lower blood pressure and a lower risk of developing heart disease later in life. Using 23 year's worth of data from over 50,000 Danish citizens, the team found that people who consumed the most nitrate-rich vegetables had, on average, a 2.5 mmHg lower systolic blood pressure and a 12 to 26 percent lower risk of heart disease.

"Our results have shown that by simply eating one cup of raw (or half a cup of cooked) nitrate-rich vegetables each day, people may be able to significantly reduce their risk of cardiovascular disease," lead researcher Dr. Catherine Bondonno said.

We Feed WA Microgreens!!

Not just fun and delicious, they are life-changingly delicious!

In a study done in 2012 comparing nutrition levels of microgreens as opposed to the full grown plant researchers found that "the microgreens were four- to 40-fold more concentrated with nutrients than their mature counterparts,” says researcher Qin Wang, PhD, assistant professor at the University of Maryland in College Park. “When we first got the results we had to rush to double and triple check them.”

We Feed WA microgreens!

I am so proud to be working with
and in cooperation with
To provide microgreens along with other essential foods to individuals and families in our community that are facing food insecurity. Every week hundreds of people receive fresh greens along with the amazing nutrition that goes with them. These go into food boxes and food pantries and other resources that are helping the local community stay fed. That way people aren't just getting boxed or dry goods, but fresh vegetables and greens even during the coldest part of the winter. And they are local greens as fresh as you can get! Not shipped from anywhere but here.

Together we are taking microgreens from being a garnish at expensive restaurants to being a staple in the kitchens of people who need them the most!

In July 2021, WSDA launched the We Feed WA Pilot Food Program to bring emergency food from Washington-based farms and food businesses to socially disadvantaged people experiencing hunger.

The program launched two months after the USDA Farmers to Families Food Box Program abruptly expired. The USDA program provided economic relief to farms and food businesses affected by the COVID-19 pandemic while providing low-barrier emergency foods to people who needed them.

While distribution levels varied over the course of the 12-month USDA program, during the final month it was still distributing approximately 1.5 million pounds of perishable food each week to more than 100 nonprofit organizations statewide. About 75 percent of these hunger-relief organizations had no pre-existing relationship with WSDA’s Food Assistance Programs.

The We Feed WA Pilot Food Program is a state alternative to the USDA program, filling the gap in Washington’s food assistance safety net by fostering economic vitality among producers and creating food access for low-income people across the state. This pilot program is in addition to, and works closely with, WSDA’s established Food Assistance programs.

Improving the way you eat doesn't have to be hard. That's what's great about microgreens: you can get all the amazing benefits of dark leafy vegetables in combination with all your favorite foods.

Tonight I am enjoying a tasty squash soup with a huge pile of broccoli microgreens on top of it along with some gorgonzola cheese and a swirl of sriracha. Paired with a grilled parmesan cheese sandwich with a huge pile of our Mighty Mix (sunflower, pea shoots, radish, and broccoli).

Total comfort food but packed with fresh nutrition! And the flavor is beyond gourmet!!! 👌🌱

Sunflower microgreens are among the most complete foods you can add to your diet to improve nutrition.

In fact, sunflower shoots are a great source of complete protein for vegetarians.

Sunflower microgreens are low in calories and high in nutrition, making them ideal for any natural and healthy fat loss program.

A quarter cup of sunflower microgreens contains about 160 calories. That same quarter cup contains about 12-grams of healthy monounsaturated and polyunsaturated fats. These are the good fats, not the unhealthy ones.

Many peer-reviewed studies have shown that sunflower microgreens nutritional components provide many antioxidant, anti-inflammatory, antimicrobial, and cardiovascular benefits.

Daikon radish microgreens contain the highest levels of vitamin E among the microgreens. In 2012, in the Journal of Agriculture and Food Chemistry, researchers assessed 25 commercially available microgreen varieties to analyze their nutritional content.

They reported that microgreens contained from four to 40 times more vitamins and carotenoids than their mature counterparts. (Carotenoids are antioxidants that are most commonly red, orange, or yellow fat-soluble pigments, providing bold colors to parts of plants).

Of the 25 microgreen varieties tested, daikon radish carried the highest vitamin C concentrations, carotenoids, vitamin K, and vitamin E.

Science is showing the benefits of eating broccoli microgreens regularly include reversing chronic illnesses such as heart disease and type II diabetes as well as prevention of some types of cancer.Turns out that broccoli is high in sulforaphane, even higher and more potent than sprouts or mature broccoli.

The nutrition in broccoli microgreens is mighty and includes Vitamins A, B, C, E, and K, macro-elements calcium, magnesium, and phosphorous,
and micro-elements iron, copper, and zinc.

Who remembers Backyard Market?! Well, they had such success with their microgreens last year that they have now taken on a new name, Mighty Micro Microgreens! We are looking forward to welcoming back a wonderful family business, operated by Seth Walser and his sons, Isaiah and Isaac Walser.
