Significant progress at the Curtis Cattle Ranch. New sorting system for the cattle. The reality of getting older and how easy it is to make one misjudgment when working cattle that can reach up to 2400 pounds, brought us to purchase the new system. It has been quite the undertaking setting it all up with a 96 year old a 65 year old and well a 50 something woman. Thanks to the tractor it was able to be done. Mark did 90% of the work while Herb and I got in the way.

What do you usually do with chuck steaks or all those roasts? I always ended up with the last of my beef being roasts! On my custom beef cut, I typically have everything that can be a steak cut, with the rest going to hamburger. Now that the kids are gone, I don’t need as much burger, so it looks like I’ll be getting a few roasts next time! This recipe is amazing!!!

Air Fryer Beef Jerky!!!

Add the sliced beef to the marinade, ensuring all pieces are well coated.
Cover and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
Step 4: Preheat the Air Fryer

Preheat your air fryer to 180°F (82°C) or the lowest temperature setting.
Step 5: Arrange the Beef

Remove the beef from the marinade and pat it dry with paper towels to remove excess moisture.
Arrange the beef strips in a single layer in the air fryer basket or on the rack. Do not overlap the pieces for even drying.
Step 6: Air Fry the Beef Jerky

Air fry at 180°F (82°C) for 2–3 hours, flipping the strips halfway through.
Check for doneness: The jerky should be dry and slightly chewy but not brittle.
Step 7: Cool and Store

Let the jerky cool completely before storing.
Store in an airtight container or zip-top bag at room temperature for up to 1 week, or refrigerate for longer freshness.

Curtis Cattle Ranch Awarded Grant for Pasture Management

We’re thrilled to share that Curtis Cattle Ranch has received a grant to support our pasture management efforts! As stewards of the land, we believe it’s our responsibility to care for the environment while ensuring the health of our cattle. This grant has allowed us to take important steps toward more sustainable and efficient land use.

With these funds, we’ve installed new feeders and implemented cross-fencing to support flash grazing—a system that allows our cattle to graze intensively in smaller areas for short periods. This practice not only ensures our pastures are grazed evenly but also gives them time to rest and regenerate, promoting healthier forage and reducing soil erosion.

We’ve been diligently working to complete these improvements before winter arrived, and we’re happy to report that we finished just in time! The timing couldn’t have been better, as these changes will positively impact both our herd and the land for seasons to come.

✨ The Perfect Winter Feast: Prime Rib & Homemade Horseradish Sauce ✨

There’s nothing quite like a perfectly cooked prime rib to warm up those chilly winter nights! On the ranch, we believe in savoring every bite of the high-quality beef we raise, and this recipe is one of our favorites. Pair it with a creamy, tangy homemade horseradish sauce, and you’ve got a meal to remember!

🌟 Prime Rib Roast
Ingredients:
• 1 (5 lb) prime rib roast
• 4 cloves garlic, minced
• 2 tbsp olive oil
• 2 tbsp fresh rosemary, chopped
• 1 tbsp thyme leaves
• 1 tbsp coarse salt
• 1 tsp black pepper

Instructions:
1. Preheat your oven to 450°F (230°C).
2. Mix the garlic, olive oil, rosemary, thyme, salt, and pepper into a paste. Rub generously over the roast.
3. Place the roast in a roasting pan with the fat side up. Cook at 450°F for 20 minutes to sear.
4. Lower the temperature to 325°F (160°C) and continue roasting for 1.5–2 hours, or until the internal temp reaches your desired doneness (125°F for rare, 135°F for medium).
5. Let it rest for 20 minutes before carving.

🌟 Homemade Horseradish Sauce
Ingredients:
• 1/2 cup sour cream
• 2 tbsp prepared horseradish (or freshly grated if you like it spicier!)
• 1 tbsp lemon juice
• 1 tsp Dijon mustard
• Pinch of salt

Instructions:
1. Mix all the ingredients in a bowl until smooth. Adjust the horseradish to your preferred spice level.
2. Refrigerate for at least 30 minutes to let the flavors meld.
