Will is all smiles celebrating our purchase of five beautiful lambs for yesterday at VA Tech’s SWAREC parasite resistance program. Of particular note is our new OW ram from Pete Odle of OW Katahdins. Will is wearing the cool OW cap in honor of our new boy. We named him King Crimson because he’s a wonderful red ram!

Hungry? May we suggest the best lamb tamales EVAH? The Good Golly Tamale crew has been making lamb tamales for years with lamb! They take just a few minutes to boil in their freezer pack or you can remove them, dip in water, cover them with a paper towel and nuke them for a quick fix. Made with sweet potatoes, black-eyed peas, and just a hint of cumin, they are savory without overwhelming that beautiful lamb. is just down the street from so come to the market and then grab some on your way out of town.

We’ll see you tomorrow at the market. We’re not sick any more and the truck is behaving (knock on wood).

So excited to be in the final phase of this NRCS water project Hoodley Creek]!! This underground potable water tank holds 1787 gallons; we’ll be converting our solar well pump system to one that uses stored water on high ground rather than replacing the old style batteries for energy storage. The solar panel will continue to work during the day time and at night water pressure from the storage tank will provide continuous water. Even the tank is ultimately recyclable. Since everything including the livestock feeders is mostly underground, we no longer will have to worry about frozen waterers and hoses.

Hoodley Creek] will be tomorrow. Yes, it’s probably going to rain but we had a blast last week and it rained also. If you’re not going to the game, come early because those parking garages start to fill up fast. If you’re going to the game, just throw your frozen lamb in a small cooler. It’s deep frozen below 0 degrees F, so it will stay cold ‘til you get it home. Bratwursts fans: we have limited supply so please pre-order or come early. It will be a couple of weeks before we restock due to a processor shut down a couple of weeks ago. Glad to say they are back online, but it will take a couple of weeks to catch up.

Also, one of our favorite custom processors will be UDSA soon so get ready if you want a whole UDSA lamb because they are just a couple minutes from the farm and you can come to the farm and then meet the butcher! They’re baaaack! ’s beautiful rib chops will be available this Saturday . Most-requested for parties and catering, these lamb lollies are especially popular with kids and adults who love to bbq without a lot of fuss. Grill over high heat a minute or two per side, but calibrate your cooking time by trying one and timing your bites. We’ve even dipped them in flour and deep fried them, served with personal aioli dishes for dipping!

Rain is gone. Time to make hay . This is a field that has never been used for crops since 1850. Over one and a half centuries of cow and sheep manure for fertilizer. Mostly orchard grass, timothy, and naturalized chicory (a natural dewormer). No herbicides or pesticides. Ever. What goes into the sheep is just as important as pedigrees and genetics. Knowing your farm’s history is something that many new farmers cannot accomplish without extensive study, and even then, it’s difficult to find. Ask your farmer if they’ve ever used biosolids on their hay fields. They should respond with a vigorous “NO”.

Some of our beautiful girls purchased at the Eastern Alliance for Production Katahdins. Excellent producers including top genetics from past SWAREC participants: NWT, FLE, WRI and RHS.

ewes are pretty on the outside with long, straight backs and excellent sturdy feet (we’ve never had foot rot on our farm)! We select for great post weaning weight, parasite resistance and good loin depth. Developing a sheep with lean meat that isn’t tough or gamey has always been our goal. We follow closely the modern research into breeding values and then combine that with trusted partners who have great farms and great track records so we can choose replacement ewes that will drive renewed vigor in our breeding groups. These genetics are expensive, but the fact that we lose very few sheep to worms or illness results in higher economy and productivity. We’re looking forward to this breeding season and to offering you the highest quality affordable lamb!

A lot of people worked many years to get the Market Square Farmers' Market and Nourish Knoxville to the place they are today, and none more so than Art. was one of the founding volunteers of the Market Square Farmers' Market back in 2004 and has volunteered almost every one of his Saturdays in the last 19 years. So when he didn't show up for his shift on July 2, Ellie, our Market Manager was worried. A very tense week followed trying to figure out if he was ok, culminating in his being admitted to the ICU at Fort Sanders with a brain bleed. He is stable and being discharged soon, but needs assistance at home and getting to appointments, which will be expensive. Until we can figure out more long-term plans, we are hiring at-home health workers to allow him to go back to his downtown hom, which is where you, fans of Nourish Knoxville come in. If you would like to help, please contribute through GoFundMe (link in bio).⁠

Art loves Knoxville, and we think Knoxville loves him back, and he needs us now.⁠

FORAGED WILD GARLIC SCAPES!!!

In addition to our scape pesto pack (from our garden), we will have bunches of wild field garlic scapes, foraged from the remote areas of ! Will was checking out acreage that has lain fallow for nearly a century. He noticed large patches of scapes that would have gone unnoticed by the last three generations because they didn’t like garlic (hard to believe, but true)!

He pulled up some 4 foot tall plants along with their tiny clustered bulbs. In researching field garlic we found that the delicate scapes are often cooked along with venison and wild mushrooms by deer hunters. They have a different, mild flavor. We will have a few bunches of 10 for $2 and we’d love your feedback!

GARLIC SCAPE PESTO! We finally have the best of the harvest and we’ve trimmed scapes to the tenderest parts. We suggest cutting the soft stems just at the “elf cap” for pesto and then pickling or stir frying the caps with onions and mushrooms. We’ve included a great recipe for pesto with the 1.5 lb bag. In the unlikely event that you find leftover lamb in your fridge (leg, shoulder, chops, or brats) a delicious idea for dinner is taking that frozen thin crust pizza you’ve had for awhile and adding lamb slices. Instant good pizza to lambtastic pizzaz.

We used a Shroommate frozen pizza from The Sweet Monkey, available (along with lamb) in Jonesborough. Our leg of lamb slices paired perfectly with the portobello mushrooms, arugula, and chipotle marinara and enhanced those toppings. A short-cooking thin crust pizza works best for this.

Come see us tomorrow. Word has it that we’ll be next to an avalanche of fresh lavender, so please follow your nose and look for our signs. It should be a lovely day at the market!

Great scapes are back from ! Chop these tender babies and stir fry with our lamb (cuts or ground), a little smoked salt, shish*to peppers , and oyster mushrooms and you are done.

You might want to grab a couple of bunches Saturday to make powder. Use the tender tops for cooking. Cut the stalks into pieces; dry and grind. Strain out larger pieces; mix the powder with salt and dried hot pepper… we like chocolate scorpion or Thai Birdseye. You may want to make a couple of mixtures: light and screaming hot, something for everyone.

Pasture is not enough.
Did you know that the lambs need more than pasture, fresh water, finishing feed and mineral ? They also need roughage - like a roll of hay. It’s lamb candy for the gut - helps em digest all that green grass 🙂Thanks to KK and Will Hoodley of Hoodley Creek farm for there tutelage on lamb raising. KK and Will are experts in sheep and lamb and have been a friend to Land Basket Farm and we thank them for their mentorship.

Those less familiar with it may think of it as “fancy” or “stuffy” and shy away from purchasing it with a fear of cooking it incorrectly. Good news about rack of lamb: even if you don’t get it perfect, it’s still delicious! Let’s take the stuffiness out of this gorgeous protein and learn how to grill it in such a way that there’s no way you’ll end up with anything less than a lick-the-bone delicious meal.

Hoodley Creek is a seventh generation Tennessee Century Farm that started in 1850. As farm owner KK Proffitt recollects, "Our farm went through the Great Depression, and I can remember stories from my grandparents about how they survived that and the rationing in WWII."

Proffitt has had a great career, with a post production studio on Music Row in Nashville. "I truly enjoyed working with high-end clients for broadcast and DVD. I opened the first surround sound studio in Nashville in 1997, and we did very well. It was a lot of fun beta testing software for clients like Avid, Digidesign, and Dolby.

"The reason why I wound up being a sheep farmer after having been an audio video engineer, producer, and musician for forty years is that I inherited the farm I had wanted to run since I was a little girl. I used to spend summers with my grandparents growing up (as well as all holidays), and it was the best experience a child could have. I always wanted sheep on the farm but the rest of my family didn’t agree, so I studied sheep for several decades."

KK isn't the only family member to make sacrifices for the farm. "My son, Will, was working on a PhD in molecular biophysics at Johns Hopkins and offered to take a semester off to help me get some things straightened out on the farm. He has not gone back but has taken the tractor nearly completely apart at least three times!

"We have about 450 sheep and we had 120 lambs this winter. Lambing is a magical experience than nothing can equal. Even though you are completely exhausted, the feeling of joy seeing the ewes and lambs together more than makes up for the sacrifice."

Hoodley Creek is doing their part to keep folks safe as they provide local food to their community. “We definitely work with customers via Facebook to set up appointments at our on-site center, and we are glad to deliver to their car. We can take their payment via Square without ever touching anything except the bag of their items with our gloved and Purell-coated hands. We also deliver to those who shelter in place in their home.”
