First market of the season at Aitkin Farmer’s Market!

We are excited to have fresh milk and a few eggs. Where is the yogurt you ask? It's coming, we have a slow production start this year and we thank you for continued support and patience.

So stop by 9am-1pm, Tom can't wait to say hello to someone other than cows!

Trying to eat healthy with a sweet tooth is difficult, but I have found a secret dessert that I sneak in nearly every day.

Ricotta, Honey, and Nutmeg.
Three simple ingredients that satisfy my sweet tooth and provide protein to fuel my day.

As we look to starting our summer season, pick up some of our fresh ricotta.

Did you know the CURD Act has been introduced to the house of Representatives and is in committee?

This bill is aimed to create a legal definition of "natural cheese". This would limit foods using this label to be only cheese made from animal milk or certain dairy ingredients that follow the established cheese making standards.

So, is this important for consumers to know if the product they are buying is a processed cheese or natural? Or is this just government over-reach? We have lots of regulatory requirements for labels, are they necessary, helpful, or just another regulatory hoop to jump through?

Amanda missed having chickens so much we decided to raise a few this year! We will have a small supply this year for purchase.

Until the dairy opens (go away snow!), we will have them available for pickup on farm by appointment. Just send us a message if you would like to pickup eggs!

The farm is located 5 miles north of the city of Aitkin, MN.

People always ask us, how do you plan to make money in such a rural area?

Well here are some basic numbers. The city of Aitkin MN has a population of just over 2,000 people residing in about 900 households. If each household bought a half gallon of milk each week ($6), we would need 15-20 cows at our target production goals to satisfy the demand. This would result in a healthy income for the farm.

I know it is not realistic for every household to support us, but that is only 1 city (not county) and a small financial investment, especially since we are able to accept EBT through our farmers market. We also have more than just milk, 1 product from each household (milk, yogurt, cheese, or frozen yogurt) would get us to this goal.

International Women's Day is meant to celebrate the social, economic, cultural, and political achievements of women.

So meet the woman behind the farm: Amanda. If you have sent us a message or email, it was likely Amanda sending you a reply. She juggles her "real" job as an Industrial Engineer, Motherhood, and farming. She is a driving force behind the farm handling licensing, finances, and marketing. When needed she jumps into the barn to help out and then right back to work off farm.

Her favorite memory on the farm is running into the barn for an emergency goat delivery (resulting in a healthy baby goat) and running back in to jump on a zoom call.
