Prepping for El Grito with a little sangrita and a little Tobala from Sola de Vega. Note the color of the mezcal - that yellowish hue is not from wood barrel aging but instead from the production process and the enamelized bowl that is used during distillation. Let's talk what goes with mezcal, which we often respond, well everything! It sounds like a cop out but it is pretty true. With the variety of flavors found in any bottle of mezcal, it is truly versatile. It's often served with orange slices and sal de gusano, or roasted cacahuates.

But, it is a great digestivo, so if you are having a meal that is heavy, ie meat or mole, it does a great job in helping break down the fats. It also works well with seafood and fish, and even a cheese course. And of course, it is sublime with chocolate and other desserts.

It is really about experimenting to see exactly how flavors balance out. If you are having a spicy meal, you might not want to feature a "spicy" mezcal as the combined heat of flavors in the mouth can be pretty overwhelming. Fruitier mezcals work with cheese, pechugas are great with chocolate, and minerali Karwinskiis can taste great with sushi. Start playing around!

Behold the mezcal cocktail - the gateway for most people beginning their mezcal journey. Bartenders were early adopters of mezcal - the arrival of mezcal in the market in the US coincided with a resurging interest in cocktails and mezcal provided the versatility and complex flavors to create exciting new drinks. That same versatility also meant it was possible to subsitute mezcal for other spirits in classic cocktails like Manhattans, Last Words, Palomas, and pictured here, Negronis.

Today we are celebrating the people of mezcal, and we want to take this opportunity to give a big high five to the people who labor behind the scenes doing so much of the backbreaking work, from getting the agave to the palenque/vinata/taberna and seeing it through the whole process, to finally serving it to you at your favorite bar. To you all, we salute you for all of your contributions in making mezcal, the true spirit of Mexico.

Let's take a moment to talk about sustainability. Given the impact of global climate change we are seeing all over the world, environmental concerns are top of mind. But the truth is, sustainability and being sustainable goes beyond the environment, it also has to address economic and the human element.

For the mezcal category, that means thinking about how agave is grown. How do we maintain genetic diversity? How do we not overharvest wild agave? How do we plant it to maintain soil health and decrease erosion? How can we look beyond boom and bust cycles to maintain a long term balance of supply and demand?

It also means thinking about inputs like wood to fire the ovens and stills, and the outputs from production, not only the smoke, but the spent agave fibers and water.

It also means looking at the economics and whether fair prices are being paid to the workers and producers, and who has access to capital.

And it means asking if the communities where mezcal is made are benefitting from the fruits of their labor, be it greater access to healthcare and education, clean water or modern services like telecommunications.

Sustainability involves A LOT of commitment and we commend the people and brands who are taking steps forward to help ensure the long term survival and viability of this beautiful spirit we call mezcal.
