Here’s a quick and easy recipe for a hearty chicken and Shiitake mushroom soup for these cold days. Buy a ready grilled chicken at the store, remove the meat and refrigerate. While you soak the GreenBox Shiitake mushrooms in hot water, bring to boil the carcass of the chicken, enough water to cover the carcass, 1 chicken stock cube, 1 peeled onion with a clove stuck into it, 1 carrot grated or sliced thinly, 1 bay leaf, 1 tsp of soy sauce, ½ tsp salt and black pepper, ½ tsp crushed garlic, 1 tsp thyme/marjoram/basil, and a small grated potato (optional). Let it simmer for 20 minutes. Drain Shiitake mushrooms. Add the soaking liquid to the chicken pot. Chop the Shiitake mushrooms into smaller pieces. Use a sieve to remove the chicken bones and whatever you don’t want to leave in the soup. Add the mushrooms to the soup and boil for 3 – 4 minutes. You can add a dash of cream (optional) and fresh parsley just before serving with some crusty bread or French toast. Enjoy!!
