Coffee Education Part 3
What Elevation Does to Your Coffee
Here's something most coffee drinkers don't know: the higher the altitude, the slower the coffee cherry grows.
Slow growth means more complexity in the cup.
At lower elevations, warm temperatures speed up the cherry's development. Fast ripening = less time for sugars and flavor compounds to develop. You get a simpler, milder coffee.
Up high, 5,000+ feet in places like Ethiopia or Colombia, cooler temperatures slow everything down. The cherry takes its time. The result is a denser bean with more acidity, more fruit, more nuance.
It's one reason you'll see "high grown" or specific elevation numbers on specialty coffee bags. It's not marketing jargon. Elevation is flavor.

Part two of our coffee education series:

Not all coffee is created equal, and a lot of it comes down to how it’s processed after harvest.

Most people don’t know that coffee is a fruit. The seed inside the cherry is what we roast. But how you get from cherry to roastable seed changes everything about the final cup. Here are the three major processing types that we source:

Washed: The fruit is stripped away before drying. Clean, bright, acidic. You’re tasting the bean itself.

Natural: The cherry dries whole around the seed. Fruity, funky, complex. You’re tasting the fruit too.

Honey: The coffee cherry's pulp is removed, but some of the sticky mucilage is left on the beans during drying, resulting in a sweeter flavor profile. This technique is popular in Central America, particularly Costa Rica, and is known for its unique taste that combines elements of both washed and natural processing methods.

Beans can come from the same farm and the same harvest yet produce three completely different cups depending on how it’s handled post harvest.

That’s the part of coffee most people never hear about — and it’s one of the reasons we nerd out over where and how our beans are sourced. ☕

This is the first in a series of coffee related educational posts.

Have you ever wondered why two bags of coffee from different countries taste nothing alike?

Flavor profiles are as unique as the region of the country it is grown in. Elevation, soil, rainfall, and how the cherry is processed after harvest, all of it ends up in your cup. A coffee grown at high altitude in the Colombian mountains is going to taste completely different from one grown in the low, humid valleys of Brazil. Same plant. Different world.

That’s why we source single origin coffees instead of blends. Every bag tells you exactly where it came from — and if you pay attention, you can actually taste the difference. Chocolate. Nuts. Herbs. Fruit. Floral. Earthiness.

Have you tasted any of it? What’s your favorite?
