Hummingbird season is going exceptionally well this year! I guess they told their friends I make the good stuff!!!
Please remember to clean your hummingbird feeders often, especially with this heat. The juice can become toxic to your feathered friends. If you don't have an ant moat, as my glass blue one, lightly coating the hanger with vegetable oil will keep ant out of your feeders!!! 💜

I plan on cutting the recipe in half and cooking this for my husband and me in the Air Fryer. Keeping costs down as it uses less electricity and doesn't heat our tiny kitchen!

Cheesy Garlic Butter Mushroom Stuffed Chicken
Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
2 tablespoons butter
8 ounces mushrooms, sliced
4 cloves garlic, minced
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Directions:
Preheat oven to 400°F (200°C).
Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through.
Season the inside and outside of each chicken breast with salt and pepper.
In a large skillet, heat olive oil over medium-high heat.
Add butter to the skillet and let it melt.
Add mushrooms to the skillet and cook, stirring occasionally, until they are golden brown and tender, about 5-7 minutes.
Add minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
Remove skillet from heat and let cool slightly.
In a bowl, mix together shredded mozzarella and grated Parmesan cheese.
Stuff each chicken breast with the mushroom mixture and cheese mixture.
Place stuffed chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes, or until chicken is cooked through and cheese is melted and bubbly.
Garnish with chopped parsley before serving.
Prep Time: 15 minutes | Cooking Time: 30 minutes | Total Time: 45 minutes
Servings: Makes 4 stuffed chicken breasts
