Bon Appetit Recipe of the Day! 😁

1 pound dried red kidney beans
1½ pounds smoked sausage, sliced
½ pound Tasso, cubed bite sized
1 yellow onion, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
1 Tablespoon minced garlic
2 pickled jalapeño peppers, chopped
7 cups of water
7 chicken bouillon cubes
3 bay leaves
½ teaspoon of thyme
½ teaspoon of sage
1 teaspoon black pepper
½ teaspoon white pepper
½ teaspoon cayenne pepper
2 teaspoons of salt
3 Tablespoons parsley

Soak beans in water for at least 6 hours before cooking. Drain water and rinse beans. Put the beans in at least a 6 quart pot. Add the water, chicken bouillon cubes, onion, bell pepper, celery, garlic, bay leaves & pickled jalapeños. Bring to a boil for 15 minutes, stirring often. Add the sausage & Tasso. Reduce heat to medium and simmer 2-3 hours until beans are tender. Add water if needed to retain consistency. Add the thyme, sage, black pepper, white pepper, cayenne pepper, salt & parsley. Simmer another 15 minutes. Remove bay leaves before serving. Serve over white rice with cornbread.

*May substitute 1 Tablespoon, or to your taste, of Cajun/Creole seasoning for the dry seasonings if preferred.
