Last month we joined ’s Cheese Club. Today we picked up May’s cheeses, but let’s turn back the clock and go back in time to a couple of weeks ago when we picked up April’s cheeses…2 8oz portions of cheese (alpha tolman and brebis), 2 perfect accompaniments (carrot jam and onion jam) and a dossier providing us with origin, pairing and technical information. We built a pretty respectable cheeseboard around them and spent a leisurely evening concocting our own perfect bites. If you’re planning on joining some sort of club, cheese is hard to beat.

We love the ease of a quick dinner. And we’ve got a laundry list of lightening fast go-to’s we depend on to get us through a hectic week. However, there is something luxurious and satisfying about slow food that can’t be matched with a 30-minute meal. Time is the unsung ingredient and anticipation is the delicious sprinkle of flavor on top. Like this Red Chile BBQ Chuck. It’s a simple meal that refuses to be rushed. You don’t have a choice, but to wait until it’s done. So crack open a cold drink and put your feet up, you’ve got 6-hours until dinner is ready, but it’s gonna be good. Really good!

RED CHILE BBQ CHUCK

Season 3 lb chuck with Red Chile BBQ Rub.

Smoke at 275° for 3 hrs (until the internal temp hits 165°).

Move to a pan and pour in braising liquid: 1 bottle Red Chile BBQ Sauce, 1 cup apple juice, 1 cup apple cider vinegar, 1 cup water. Should come up about halfway on roast. Cover the pan and smoke an additional 3 hours. Until fork tender. Check it occasionally and add more water if necessary.

Shred beef in pan and remove fatty/sinewy pieces. Spoon off excess oil. Pile shredded meat into a good sturdy bun, preferably toasted. Add pickles, onions and eat outdoors for the ultimate dining experience.

The big southwestern salad. I don’t do anything small. Certainly not salads. This one sports a fresh foundation of green leaf lettuce, thin sliced radish, sweet cherry tomatoes and slivers of red onion. Next, I add plenty of grated sharp cheddar, toasted piñons and pan fried corn. Crowning this leafy throne is slices of tender grilled pork, crispy ancho dusted tortilla strips and a generous drizzle of my Ancho Rancho homemade dressing. I promise you won’t leave the table hungry after devouring this beast.
