This weekend we are making triple chocolate cupcakes with real strawberry frosting. Just in time for valentine's day! ❤️💜 Going live around 2 pm EST, Sunday.

Strawberry Frosting
1 cup of fresh or frozen strawberries
1 cup unsalted butter (2 sticks of butter)
1 cup of confectioners sugar, sifted
1 teaspoon vanilla extract
2 & 1/2 cups confectioner's sugar, sifted

Triple Chocolate mini Cupcakes
1 (18.25 ounce) package devil's food cake mix
1 (5.9 ounce) package instant chocolate pudding mix - Be careful they come in two different sizes and we need the larger one.
1 cup sour cream - Do yourself a favor and buy a small 8 oz package so we can just use the whole package instead of measuring from a larger one
1 cup of unsalted butter (2 sticks)
4 eggs
1/2 cup warm coffee
2 cups semisweet chocolate chips

Bake and cook with me today! We are making pumpkin cheesecake and loaded mashed cauliflower!

Cheesecake
• 1 (15-ounce) can pumpkin puree
• ¾ cup of dark brown sugar
• 1 teaspoon ground ginger
• 1 teaspoon ground nutmeg
• 1 teaspoon cinnamon
• 1/8 teaspoon of cloves
• 1 & ¼ cup of crushed pecans
• ¾ cup of almond flour
• ½ teaspoon nutmeg
• ½ teaspoon cinnamon
• 4 tablespoons unsalted butter
• ¼ teaspoon kosher salt
• 4 eggs (3 whole + 1 yolk)
• 1 tablespoon vanilla
• 3 8 oz packs of cream cheese

Mashed Cauliflower
1 pound cauliflower
4 ounces sour cream
1 cup grated cheddar cheese
8 slices bacon cooked and crumbled
2 tablespoons chives snipped
2 tablespoons butter
1/4 teaspoon garlic powder
salt and pepper to taste
