The hills are alive…with the sound of cheese! 🧀

The other night I was thinking about my favorite comfort films and close to the top of that list, you will find The Sound of Music. I’d wager a guess and say I’m not alone in this; I mean who doesn’t love Julie Andrews twirling whimsically around up in the Alps or the ultimate on-screen daddy, Captain Von Trapp, standing up and declaring his Austrian pride to evil N***s, or even (my favorite) a group of musically talented nuns having an unrealistic but hilarious knowledge of how to dismantle auto parts? It’s like, the greatest movie ever. It even has an intermission so you can get up and open another bottle of wine, make a snack, light a candle, etc. Christopher Nolan, TAKE NOTES: we need to bring back the mid-movie intermission because I can’t do three hour movies anymore.

I promise, this is actually all relevant to this post. Today’s featured cheese is Mt. Alice, and it’s actually made by the descendants of the real-life von Trapp family that the story is based on!!! Omg.

After leaving Austria and touring around Europe for a little while, the von Trapps eventually made their way across the pond and settled in Vermont. Werner (one of the sons) and his wife Erika, started the von Trapp family farm in 1959, and nearly 7 decades later it still produces sustainably farmed meat and dairy products. Ownership of the farm has stayed in the family all of these years, passing down through three generations of von Trapp children. 🇦🇹

This particular cheese, Mt. Alice might be one of my all-time favorites. It’s a soft “bloomy” with much more flavor than your typical grocery store brie, but not NEARLY as much funky pungency as a classic French brie. I get bright, delectable notes of meyer lemon, creme fraiche, spring grass, and an ever-present whisper of Austrian pride. It’s absolutely delicious on some warm baguette in the morning, or on your date-night charcuterie board! This is a cheese that plays well with others and is beloved by all.

I’ll be sampling out a bit of this tomorrow during our tasting, so come down and try some! It’s worth climbing every mountain for.

Breaking news: Delice de Bourgogne is temporarily back at Unwined! 🎉🥳

If you - like so many others - have been missing this delicious triple cream, it’s back this week and on a bit of a sale too! We were offered some really lovely wheels of Delice from our friends over at Ripe, and even though I had to break up with it last year due to quality control issues, I figured maybe it was time to give it another try and see how it goes. ❤️‍🩹

So far so good; these wheels are creamy, buttery, and perfectly ripe! So if you want to enjoy some Delice this week, please come grab some before it’s gone because I’m not entirely sure if we will have it back again permanently. 🧀

Happy Friday everyone,

I hope you missed your favorite cheese content last week! I really ought to apologize for my absence - you see, it was imperative that I return to the motherland for a week to fraternize with my fellow Danes, eat cheese on another continent, and “hygge” a bit overseas! 🇩🇰

But now I’m back, and I’m really excited (and so is my very handsome life companion, Drew)  because I returned to find the lovechild of the GODS in our case.  Everyone, please meet Tempesta’s ‘Ndujadella - something that you will either find to be completely blasphemous or an innovation unparalleled by anything else in the realm of charcuterie. 🙌

This delicious, pasty, spicy, sexy mayhem is what happens when you combine Mortadella with ‘Nduja.  If you need a crash course on deli meats, Mortadella is basically fancy Italian bologna, and ‘Nduja is a sort of spreadable pork product, blended with Calabrian chillies.  They are two of my favorite things, so when I found out from one of our reps that they have merged into one unique product, I pretty much lost my mind. 🤯

Now, before you go thinking that this is super similar to bologna and announce: “bUt I dOn’T lIkE tHe TeXtuRe,” let me just reassure you that this is so much softer, SO much more spreadable, and infinitely more delicious than such pedestrian processed meats as bologna (no hate though because I do love a grilled cheese with bologna sandwich.) 🥪

But you don’t even have to take my word for it, you can come and try some tomorrow during our Saturday tasting from 2-5! Cheers. I’m glad to be back behind the counter! 😎
