What's the best way you've found to use up some eggs?? I love hard-boiled eggs. On their own, adding them to dishes and salads etc. But the peeling...ugh. Peeling farm-fresh duck eggs is no cake-walk. I've been using this no-peel method for hard-boiled eggs and I'm loving it! It's a great way to cook lots of eggs at once, and you can keep them in the fridge to use throughout the week. A couple tips:
1. Don't skimp on the oil/fat. Make sure you oil the heck out of those pans before you crack the eggs!
2 The water bath is an important step, so don't skip it. The water keeps the air moist so the eggs don't dry out, and is helps the eggs to cook evenly.
