We have a few spots left for our chicken CSA this season.

Our birds are outside every day on rotating pasture, exclusively fed certified organic feed with no GMOs, no glyphosate, no pesticide residue. We keep our flocks small so we can actually take care of them and the land they live on.

Heritage Breeds like red wattle, Large Black, Old line Duroc, Mangalitsa and Berkshire. These breeds grow a little slower than the pink factory pigs, are great foragers, and we give them time to develop deep rich flavor and intermuscular fat.

They're fattened on a custom mix that includes Local Wheat, local Barley, Organic Peas and a touch of Organic sunflower seed meal. (No corn, no soy!)

Which makes this Pork, super high on flavor, low on polyunsaturated fatty acids.

Dark red meat and firm white fat! The way pork should be!

Of course great on a cheese board but also. I'm thinking it would be amazing on a Pork Banh Mi!

Wind in the willows? No. Pigs in the willows! The Willow species Salix X are incredible. Here they supply shade and habitat for pigs to be pigs. Some of the willow here is getting a bit old. I'll be coppicing this in stages over the next three years to rejuvenate the stools (pic 3). With the nutrients from the pig p**p they won't take long to grow back to this height. Check out the last pic to get a look at the pork bones I picked up from and put in an aerated static pile, theyre just getting up to temp (I built it yesterday) after a month at 140 or higher they'll be odorless, clean, and ready for making bone char. Stay tuned!
