πŸ₯š INGREDIENTS:
❇️ 9 eggs
❇️ 1 container (15 oz) small curd cottage cheese
❇️ 1 1/2 cups shredded sharp cheddar cheese
❇️ 4 tbsp. butter, divided
❇️ 2 tbsp spicy brown or yellow mustard
❇️ 1/2 tsp salt
❇️ 1/2 tsp black pepper
❇️ 1/3 cup all-purpose flour
❇️ 3/4 tsp baking powder
❇️ 1 cup fresh or frozen corn kernels
❇️ 1/2 cup sliced green onions (about 4)
❇️ 1 cup seeded and chopped plum tomatoes (about 3)
❇️1 tsp minced garlic

🍳 Instructions
❇️ Preheat oven to 350Β°F. In a large bowl, whisk eggs until blended. Stir in cottage cheese, cheddar cheese, 2 tablespoons melted butter, mustard, salt and pepper.
❇️ In a small bowl, whisk together flour and baking powder. Stir into egg mixture until smooth.
❇️ In an oven-safe 10-inch skillet, melt 2 tablespoons of butter over medium heat. Add corn and green onions; cook for 3 minutes. Stir in tomatoes and cook for 5 minutes more. Add garlic and cook for 30 seconds.
❇️ Pour egg mixture over vegetables in skillet. Bake uncovered for about 30 minutes, or until center is set, and a knife inserted near the center comes out clean.
❇️ Let stand 5 minutes before slicing into wedges. Serve warm.

INGREDIENTS:
❇️ 1 tsp vegetable oil
❇️ 3/4 lb lean ground turkey or lean ground beef
❇️ 1/2 cup chopped onion
❇️ 3 1/2 cups reduced-sodium chicken broth
❇️ 1 can (6 oz) tomato paste
❇️ 1 tsp dried oregano
❇️ 1/2 tsp dried basil or marjoram
❇️ 1/2 tsp black pepper
❇️ 1/4 tsp garlic powder
❇️ 6 oz dried spaghetti, broken into 3- to 4-inch pieces
❇️ 4 oz cream cheese, cut into chunks
❇️ 1 cup shredded cheddar cheese
❇️ Additional shredded cheddar, for garnish (optional)
❇️ Chopped fresh basil or parsley, for garnish (optional)

INSTRUCTIONS:
❇️ In a large nonstick saucepan, heat oil over medium heat. Add ground turkey or beef and onion. Cook until the meat is browned and the onions are tender. Drain excess fat.
❇️ Stir in chicken broth, tomato paste, oregano, basil, black pepper, and garlic powder. Bring to a boil.
❇️ Stir in broken spaghetti. Reduce heat and simmer uncovered for 17 to 20 minutes, stirring frequently, until spaghetti is tender and sauce reaches desired consistency.
