Stuffed Zucchini Boats (Healthy & Filling)

Ingredients:

2 zucchinis (halved, seeds removed)
1 cup ground beef or turkey
1/3 cup cooked rice or quinoa
1/2 cup tomato sauce
1 cup shredded cheese
1 tbsp olive oil
2 cloves garlic (minced)
1/2 tsp salt
1/4 tsp black pepper

Directions:

Preheat oven to 180°C (350°F).
Scoop out zucchini centers to create “boats.”
Cook meat with garlic, salt, and pepper.
Add rice and tomato sauce, mix well.
Fill zucchini with the mixture.
Top with cheese.
Bake 20–25 minutes until tender and golden.
