This is one of Greg’s favorite times of year — seeding what will become this season’s peppers (and sauce).

Everything started this weekend with saved seeds, trays of soil, and a lot of care and patience. It’ll take about a week to see sprouts, and nearly two months before these plants are ready to go into the ground. Then, another two to three months before we start harvesting.

But the wait is worth it, because there’s nothing like crafting with fresh-grown produce.

We’re especially grateful for our partner farm , who will be helping grow these peppers that will be used for a fourth sauce we’ve been working on this winter.

The time is almost here. In just a few weeks we’ll begin seeding our peppers, so here’s a little look at how we do it.

Every year we save the best-looking peppers from our first harvests and collect their seeds. It’s all about size and flavor.

We also trial new seeds we’ve collected from some dried peppers we find on our travels - which is always a fun experiment in hopes of bringing you new flavors for new sauces!

From there, we carefully prepare the seeds and wrap them in paper towels to control moisture and prevent mold. The next season starts long before the first plant goes in the ground.

People often ask how Springs Fireplace got started. And we often think about the people who take chances on us — one of the first was .and.s.cornershop.

More than a coffee shop or convenience store, this small space, tucked along Fort Pond Boulevard in Springs, is something special. Ceramics, clothing, art books, household staples by emerging makers — and one of the best cups of coffee in the Hamptons. They were our very first retailer.

We’ll always be grateful for the early support, and the choice to support and promote local. Soon, we’d love to take you inside and share more of that story.

We love to cook. But on Super Bowl Sunday, we keep things simple and let our Salsa Roja do the work.

Packed with roasted tomatoes, poblano peppers, and jalapeños, then slow-cooked for layered flavor and finished with lime juice. Just the right kind of medium heat. Made to stand on its own.

Happy New Year from Springs Fireplace… and a quick look back at 2025, our most challenging and rewarding year yet!

This year we made more sauce than ever, showed up at our first Summer Fancy Food Show, launched Aji Mango, and somehow found ourselves on Oprah’s Favorite Things and the national news.

But the moment that matters most will always be hearing from a customer:
“This is my new favorite sauce.”

If you’re reading this, you played a part in that. Thank you for cooking with us, supporting small farms, and choosing to bring our sauces into your kitchen.
