This squash is called Black Futsu. This one comes from a Japanese heritage and dates back to the 17th century. The Black Futsu has multiple culinary uses from baked to pickled and even eat it raw on a salad. The skin is thin enough that they say it is edible which is a big plus because of the deep ribbing it makes it a bit of a challenge to peel. They can be eaten at the less mature stage when they are still dark green or black or when they are at a more mature frosty tan color. It is said to taste like a combination of roasted chestnuts and sweet pumpkin. This squash also make a unique table decoration and can be added to any fall display.

This is the Flat White Boer Ford. Thiis pumpkin originated in South Africa. It's name is both descriptive and carries back some of It's heritage. Boer is the African word for farmer. This pumpkins is great for stacking and also has some culinary use as it has a fine bright orange flesh and is good for soups, purees and pies.

Here Carl holds a monster Georgia Candy Roaster. This squash was cultivated by the Cherokee in Northern Georgia, South Carolina and Tennessee. While this is not one of the fanciest squash that we grow, I would say it's one of the tastiest. Chunk it up,, a little butter and maple sugar about an hour in the oven and voila!! A squash dish even non squash lovers like!

This is called Red Warty Thing. Its name is very descriptive of its appearance. This is another heirloom squash developed in the late 1800s. It is a cross between an ordinary pumpkin and a Hubbard squash. This variety was hidden for some time until Roger Rupp from Rupp seeds ( where we get a lot of our seeds) was able to retrieve the seed out of the seed bank in 2000.
This squash is definitely edible and has a flavor and consistency of a Hubbard squash. Some growers have renamed it the Strawberry pumpkin to give it a more appetizing descriptive name.
