Bottling up vanilla today, used just over half of this 7 gallon barrel. As you can see, the beans are almost filling 1/2 the barrel (I removed some for vanilla bean paste prior to taking the pic) When I first started, almost 10 years ago, the recipe I used, called for 2-3 beans per 8 ounces of liquid. I have always AT LEAST, doubled that. The recipe also called for letting the mixture “brew” for 6-8 weeks. I brew for a minimum, of 6 months. After working craft fairs & selling out every year, I began brewing in larger quantities. Starting at 3 gallons, then 5 & now 2 barrels that are 7 gallons each. I also brew for a minimum of 2 years, this latest batch (and my previous bottled batch) was brewing for 3 years prior to bottling. So please know, when you buy from me, I have put a ton of labor and love in to this product. Not to mention time. It is super concentrated for optimal flavor, along with brewed for years for amazing taste. I promise, you will not regret your choice when you try this.
