Fingal • Coolship Saison

Brewed in collaboration with Irish knife and cheese maker from Gubbeen, Ireland, Fingal Ferguson. Open fermented in our roof top coolship with saison yeast, picking up natural Alaska flora in the cool night air. Transferred to oak foeders with brettanomyces for a long, slow, and complex fermentation. Naturally carbonated in the bottle.
