LIMITED EDITION SAUSAGE OF THE WEEK
This week’s special has some personal history! The Filipino Adobo-Inspired Sausage, based on the version of chicken adobo I grew up eating at least once a week as a kid.

In Bermuda we lived adjacent to a vibrant Filipino community, and among other things chicken adobo was on the table at least once a week. The flavors stuck with me—soy sauce, vinegar, bay leaf, garlic, and peppercorns—and they’ve made their way into this sausage, along with jasmine rice and tender chunks of potato.

Those potatoes are key. Straight from our family friend’s recipe, and always part of the version we grew up on. It’s rich, tangy, comforting, and packed with flavor and memory.

This week’s new flavor is inspired by a comfort food classic: Greens and Beans.

I’ve taken the theme of the dish—Lacinato kale, creamy cannellini beans, garlic, onion, rosemary, and Italian spices—and turned it into a hearty, deeply savory sausage that’s equal parts rustic and refined. It’s comforting, earthy, and packed with flavor. Perfect on the grill, tossed with pasta, or just seared in a pan and eaten straight.
