FREEZING SWEET CORN: We get alot of questions on how to freeze sweet corn. Here is a family recipe that makes it very simple. What you need to know……here are specific instructions:
1. It takes about 2.5 dozen to make the 5 quarts for this recipe.
2. It takes about 1.5-2 hours from the time you start to husk until it is cooked and you are ready to wait for it to cool.
3. Husk the corn
4. Cut the corn off the uncooked cob. You do not need to cook it before you cut it off the cob
5. Measure all the ingredients and put in pot on the stove. (A quart is equal to 4 cups)
6. Bring your corn to a boil over medium to medium high heat. Then set your timer to cook for 10 minutes. Stir occasionally.
11. Let cool
12. Put in quart size freezer bags and freeze. I find 3 -4 cups per bag works great for my husband and I and 2 grown boys.
