POTATOES IN THE CLASSROOM

The Wisconsin Potato Growers Auxiliary wants students to learn about the importance of the Wisconsin potato industry. The Auxiliary has developed a program called “Kids Dig Wisconsin Potatoes.” Your students will learn first hand what it takes to grow potatoes. We will supply you with seed potatoes, a materials list, and instructions. We’ll even help you plan a Harvest Party for the class when it is time to harvest your potatoes.

PROGRAM DETAILS:
- All schools that sign up by the deadline will receive free Wisconsin seed potatoes in January
- Fun interactive activities and lesson plans utilizing math, writing, social studies, and science
- Website where you can download lesson plans, activities, and videos
- List of books and other resources
- Kid-friendly recipes and healthy nutrition facts
- This program meets 4th grade curriculum
- Program runs January-May 2020
- Registration deadline is December 13, 2019

ARE ALL THE NUTRIENTS IN THE SKIN OF THE POTATO?

No. While the skin does contain approximately half of the total dietary fiber, the majority (> 50%) of the nutrients are found within the potato itself.

FACTS:
- The only nutrient significantly lost when the skin is removed is fiber.
- A medium (5.3 oz) potato contains 2 grams of fiber with the skin and 1 gram of fiber without the skin.1
- Potassium and vitamin C are found predominantly in the flesh of the potato.
- A medium (5.3 oz) potato with the skin contains 620 mg of potassium and 27 mg of vitamin C.1 Removing the skin eliminates approximately 150 mg of potassium and 4.5 mg of vitamin C.
