Kรถlsch service originated in the breweries and traditional taverns of Cologne (Kรถln), Germany. It is designed to ensure the beer is always served cold and fresh.
According to Grace Lee-Weitz in an article from ๐๐ฐ๐ฑ ๐๐ถ๐ญ๐ต๐ถ๐ณ๐ฆ, the cityโs history with kรถlsch service stretches back centuries to when people used to pass through Kรถln, a waypoint for those making pilgrimages across Europe. These interlopers, called Jakob, sometimes stayed weeks at a time, serving at the bars to make a buck. In fact, the word kรถbes derives from Jakob.

In the same article, Lee-Weitz shares that kรถlsch is so important to Kรถln that, in 1986, more than twenty-four kรถlsch breweries banded together, signing something called the Kรถlsch Konvention. The document laid out the specifications for brewing a kรถlsch, including that these beers must be brewed in or only a short distance from Kรถln. Codified in 1997, kรถlsch is now protected as a geographical destination, similar to how real champagne can only come from the Champagne region of France. Thatโs why we call our Hans a โKรถlsch-Style Ale.โ
