Gluten-free baked goods can lose their just-baked texture surprisingly quickly, especially breads, muffins, and other bakes without preservatives. That doesn’t mean you have to eat the whole batch right away.

Freezing is one of the easiest ways to preserve the texture and freshness you worked so hard to create. Once your baked goods have cooled completely, wrap them well and freeze what you won’t eat within the next day or two. When properly stored, many breads, muffins, cookies, cakes, and pie crusts freeze beautifully.

Ever wonder why a recipe bothers specifying “room temperature” ingredients? It’s one of those little instructions that can be tempting to ignore, but it can make a real difference.

When ingredients are closer to the same temperature, they tend to combine more smoothly and evenly. This is especially important when creaming fats with sugar or mixing batters, where very cold ingredients can cause fats to firm up or the mixture to separate. A smoother, more evenly mixed batter can help create a more consistent texture once it reaches the oven.

That doesn’t mean every ingredient in every recipe needs to be warmed up. If the recipe specifically calls for something cold, trust it. But when it says room temperature, there’s usually a reason.

✨ Bonus Tip: Forgot to plan ahead? You can bring eggs closer to room temperature by placing them in a bowl of warm (not hot) water for about 5–10 minutes.
