Good things that Europeans brought to Texas….

Chicken fried steak is schnitzel. Germans brought it to Texas and it never went home.

The method is identical. Take a cheap cut, pound it thin, dredge it in flour and egg and crumb, and fry it in shallow fat. In Austria and southern Germany that is Wiener Schnitzel, made with veal, or Schnitzel Wiener Art with pork.

German and Austrian families settled the Texas Hill Country from the 1840s. They had no veal and no breadcrumbs to speak of, so they used beef round and flour, and they poured cream gravy over it because that is what was on the table.

By the 1900s it was on menus across Texas and Oklahoma as chicken fried steak, meaning steak cooked the way you cook chicken.

It is now about as American a plate of food as exists, and it came off a boat.

Do you order it, and with gravy or without?

Bring a little Italian warmth to your kitchen this fall. ❤️🍂🔪

The WÜSTHOF Amici Collection is inspired by what makes time in the kitchen so special: family, friendship, good food, and gathering around the table.

Each knife pairs WÜSTHOF’s legendary German craftsmanship with distinctive handles made from Calabrian olive wood. Naturally beautiful and rich with character, no two handles are exactly alike.

And these knives are made to do more than look beautiful. They’re designed for the everyday rituals that bring people together, from preparing a quiet weeknight dinner to cooking for a table full of family and friends.

Beautifully made. Made to be used. Made for meals worth sharing. ❤️
