These are 100% Dairy-Free & Egg-Free, making them a rare find for your Easter baskets this year. While they’re still made with the same premium ingredients and incredible flavors, they’ve got a little extra "character"—some minor cosmetic chips or smudges that kept them from being "picture-perfect."

So for the boxes our set of 6 is gonna be two of the double dark chocolate truffle bonbons, two of the chocolate caramel leaf, one dark chocolate strawberry rose, and one chocolate strawberry heart. I'm sorry I haven't had too much to show off recently! Being a Cook III is mostly about bulk production. While I'm able to to do some little decorative things every now and again, my job is usually based around laying the foundation for the cook I and II's to make the wonderful art that they make. I consider it a right of passage in this busy industry until I've gained the trust and the skill to help make what we make sparkle.

Right now I'm doing cookies, brownies, sheet cakes, bulk production of overnight oats, chia pudding, granola bars - but tommorow I might be doing our layered cakes, the little decorative treats for our club lounge, and much more. I love my team and the role we each play! Pastry team makes it happen daily 💪💖

~Advanced Culinary~
These last 8 weeks were particularly challenging for me. As someone with ZERO interest in being on the hot line, or using red meat ingredients, I had to tough it out. I can't have pork or beef - I mean, I did try them, and I did suffer for it - but my allergy to red meat makes my stomach cramp. Regardless, we were able to make some amazing looking dishes with a wonderful team.

Isabella, thank you for bringing all of your experience to the table, I don't know how much more us pastry students would have struggled without you.

Sally, thank you for being kind and reminding us we're here to learn. It's easy for me to forget I'm in school when I'm already working in the industry, so thank you for bringing us back down to earth.

Sophia, thank you for the joy and inspiration you brought to the team. I can pick your voice out of a crowd in the best of ways and your ability to apply what you know from pastry to savory food is absolutely inspiring.

This was the most bittersweet desert I've ever had to make. If you know me on a personal level you know I have a tumultuous relationship with my biological mother - I see the human in everyone and I know she is unwell but for personal reasons I just can't. But there was always one woman who was around consistently despite how awful my dad was sometimes, despite how hard her own life was. When she passed I didn't know what to do with myself or where to put my feelings. I still never got to show her the first chapter of the fantasy book I was/am writing (I honestly feel like I owe it to her now to finish it).

I'm bad at grieving. I hate grieving. I hate thinking about how short life really is and how much we don't take advantage of the human moments within the absolute chaos of the modern world. But projects like these make me have to. I procrastinated to the very last minute to write my peice and of course I cried, from the feedback I've been getting I made others cry also 💔💖.
