🎉 Funfetti Birthday Fun at Mimi’s Kitchen! 🧁💕

Mimi’s Kitchen had the sweetest time hosting a Funfetti Birthday Party for one very special little girl! 🎂✨

We welcomed 10 amazing little bakers into the kitchen, and they absolutely rocked it! 👩‍🍳👨‍🍳 From mixing and baking to decorating and, of course, tasting their creations, there were plenty of smiles, sprinkles, and laughter along the way.

There’s something so special about watching little hands learn new skills, get creative, and feel proud of what they made. 💕 Thank you for letting Mimi’s Kitchen be a part of such a fun birthday celebration!

🥔 Our First Potato Harvest! 🥔

We tried growing potatoes for the very first time this year at Olin Farms, and I’d say our first experiment was a success! ❤️

We planted our potatoes in hay and surrounded them with wire fencing, then waited to see what would happen. And look at all these potatoes! We ended up with a beautiful mix of red and yellow potatoes—some big, some tiny, and everything in between. 😂🥔

Next year we’ll probably change up our growing method a little to see if we can get more of those nice, big potatoes, but that’s part of the fun of gardening—every season teaches you something new.

There’s just something so satisfying about digging into what you grew yourself and seeing what’s underneath. 🌱➡️🥔

Year one of potato growing is officially in the books! Now…what should we make with all these potatoes? 😋

Mimi’s Kitchen is all about good food, simple living, and preserving the goodness God provides. ❤️

Here you’ll find a little bit of everything from my kitchen and garden—cooking, baking, home canning, pickling, freeze-drying, vacuum sealing, gardening, preserving fresh fruits and vegetables, and good old-fashioned homemade recipes.

One of the biggest reasons I created Mimi’s Kitchen is to share these skills and teach others how to do them too. Whether you’ve never canned a jar of vegetables, baked something from scratch, preserved a garden harvest, or you simply want to become more confident in the kitchen, I hope you’ll learn something here and be inspired to give it a try.

I love taking what we grow and turning it into meals, baked treats, and food our family can enjoy throughout the year. I’ll share step-by-step tips, recipes, techniques, successes—and probably a few lessons learned along the way!

Mimi’s Kitchen isn’t about perfection or fancy cooking. It’s about learning skills, passing down traditions, feeding the people we love, and making memories around the kitchen table.

🌽 Freeze-Drying Fresh Corn at Olin Farms 🌽

One of our favorite ways to preserve fresh-picked corn from the garden is by freeze-drying it. It keeps that sweet corn flavor, lasts for years when stored properly, and is so easy to use later in soups, casseroles, side dishes, or even as a crunchy snack!

Here’s how we do it:

🌽 1. Pick and prep the corn
We start with fresh corn from the garden, then shuck it and remove all the silk.

🌽 2. Blanch the corn
Blanch the ears briefly in boiling water, then move them straight into ice water to stop the cooking process.

🌽 3. Cut the kernels off the cob
Once cooled, we cut the corn kernels from the cob and spread them evenly on the freeze-dryer trays.

🌽 4. Freeze-dry
The trays go into the freeze dryer, where the moisture is slowly removed while preserving the flavor, color, and texture.

🌽 5. Check for dryness
Before storing, we make sure the corn is completely dry and crisp with no moisture remaining.

🌽 6. Package for long-term storage
The finished corn goes into airtight Mylar bags or jars with oxygen absorbers and is stored in a cool, dry place.

✨ Why we love freeze-drying:
It gives us an incredibly long shelf life, requires no refrigeration once packaged, keeps the corn lightweight and easy to store, and rehydrates beautifully when we’re ready to cook with it.

And just like our frozen corn, we don’t add any salt or seasonings during preservation—just simple, homegrown corn straight from the garden.

🌽 Fresh From the Garden — Saved for Later! 🌽

There’s nothing quite like fresh-picked sweet corn from the garden! Today at Olin Farms, we’re putting some of our harvest away so we can enjoy that fresh summer flavor all year long. 💛🌽

Our simple way to freeze fresh corn:

🌽 Pick it fresh from the garden
🌽 Shuck and clean the ears
🌽 Blanch the corn, then cool it quickly in ice water
🌽 Cut the kernels right off the cob
🌽 Portion into vacuum-sealer bags
🌽 Vacuum seal and freeze!

No salt. No seasonings. Nothing added. Just fresh garden-grown corn, preserved exactly as it is. When we’re ready to use it, we can season it however we want for soups, casseroles, side dishes, or just a big bowl of sweet buttered corn.

A little work during harvest season means a little taste of summer waiting in the freezer all winter long. ❤️
