The answer might surprise you.
Neither.
It all depends on what the bees were visiting... and what you like.

One of the questions we hear all the time is...
"Why doesn't my new jar of honey look like the last one?"
Because the bees don't visit the same flowers all year long.
As the seasons change...
The flowers change.
The nectar changes.
And the honey changes with them.
Spring Honey
Spring honey is often:
โข Light yellow to golden in color
โข Mild, delicate and floral
โข Bright, fresh tasting
โข Made from early blooming trees, fruit blossoms and spring wildflowers
Many people describe it as clean, sweet and smooth.
Summer and Fall Honey
Later in the year, the honey often becomes:
โข Darker amber or even deep brown
โข Richer and bolder
โข More complex
โข Sometimes carrying notes of caramel, butterscotch, warm spices or earthy flavors
By late summer and fall, bees may be working clovers, goldenrod, asters, buckwheat, chestnut, and many other blooming plants.
Every bloom leaves its own fingerprint on the finished honey.
So which one is better?
Neither.
It's a lot like coffee.
Some people want something light and smooth.
Others enjoy a dark, bold cup with lots of character.
Honey is the same way.
Personally...
Give me the darker, richer bold honeys.
But plenty of people prefer the light floral sweetness of spring.
The Queen Bee likes her honey in the middle
Lexi enjoys just about every kind we have but her favorite is from her beehives
Lucas well as long as it is sweet he is eating it.
Neither is wrong.
They're simply different.
That's one of the things we love most about local honey.
Every season tells a different story.
A rainy spring.
A dry summer.
A wet fall.
Different flowers.
Different weather.
Different nectar.
Different honey.
That's why two jars from the exact same beekeeper can taste completely different just a few months apart.

Some of the best things in life aren't meant to stay the same.
The seasons change.
The flowers change.
The bees adapt.
And something beautiful comes from each one.
Honey may be one of the most unique foods on earth.
Every jar tells the story of where it came from and what was blooming when the bees made it.
And that's exactly the way we like it.
We hear people say they don't like honey.
I usually tell them they probably just haven't found the right one yet.
With thousands of nectar sources around the world, the flavors of honey are nearly endless.
I truly believe there's a honey out there for just about everyone.
