With only 10 minutes of prep and 20 minutes of cooking, this colorful recipe is refreshing, comforting and easy to personalize. Chef Gia Fazio prepares it with special guest Ron Funches in the newest episode of Care Kitchen.
Why we love it:
✅ Ready in 30 minutes
✅ Makes four servings
✅ Can be prepared ahead
✅ Uses simple, affordable ingredients
✅ Can be adjusted for lower-fiber or higher-fat needs
✅ Works with many different vegetables and toppings
For a lower-fiber version, use white pasta, omit the onion and peas, peel the carrots and zucchini, and cook the vegetables until very soft. For additional fat and calories, add pine nuts; for more protein, top with chicken, chickpeas or cheese as tolerated and recommended by your healthcare team.
