Acadiana's Landrace Chicken - Tenebres Geante.
These birds are French Bresse Chicken built for that , so if there was a Cajun Chicken, it would be the Tenebres, which means Darkness in French.
Bresse that have the tools to survive and thrive. No, they don't look like Bresse on the outside. They don't stand like Bresse. they don't sound like Bresse. Pretty much all that is still French is the magical quality of marbling fat into the meat, which higher in protein and nutrients, and healthy fats than common chicken.
What's a Landrace? A landrace chicken is a type of poultry population that evolved naturally over generations in a specific geographic region, primarily through natural selection and minimal human intervention for standardized traits. Unlike modern breeds shaped by artificial selection for uniform looks or high production, landraces adapt to local climates, forage effectively, and show genetic diversity in plumage, size, and behavior.
Why do the Tenebres Geantes count as a Landrace? They started as Bresse several years ago on Jau-Berry Farmstead and through Aerial predator pressures, and various additions the original Bresse is not even recognized as the introduction of other other breeds to help the Bresse survive have created several generations of hybrids. You will notice that The Tenebres come in a variety of different specs
Some have feathered shanks from Black Copper Marans influence.
Some have pea combs from Brahman influence
Some have white or smokey speckles from Original Bresse influence
There is no definitive "Exact" definition of a Tenebres. It is a large upright Bresse with influences from several different breeds reacting to localized pressure.
