🇲🇽 A mis hermanos y hermanas mexicanos…

¡Hermanos, morritos, plebes! ❤️

Sin más ni más…

¡VIVA MÉXICO, CABRONES! 🇲🇽❤️

Your local Mexican,
Valeria Ayers

🇺🇸 To my Mexican brothers and sisters…

Brothers, morritos, plebes! ❤️

A very special date is coming up … one that, back in Mexico, we would normally be celebrating by drinking, eating, singing, and screaming at the top of our lungs:

VIVA MÉXICO, CABRONES! 🇲🇽🇲🇽🇲🇽

No matter what. 😂

At home, in the town square, out in the streets or wherever we happened to be… we can yell at whatever politician is in office, we can agree or disagree about a thousand things, but when that moment comes:

VIVA MÉXICO!

September 16th is the date that marked the beginning of Mexico’s Independence, and I was SO excited to open our new location with a mariachi band this September 16th.

In my head, I already had a surprise planned for all of you who are so far away from your home, your families, your friends, and Mexico. 🇲🇽❤️

But unfortunately… it looks like it’s not going to happen this year. My health inspection still hasn’t happened, and even though I pushed as hard as I possibly could to make it happen in time, I’m starting to accept that opening by September 16th just isn’t going to happen.

But I promise you one thing:

Next year, we are going to throw one hell of a party. 🎺🇲🇽

Mariachi, banda, and everything I can possibly bring to give you a little piece of Mexico right here. Because if there’s one thing I want Ay Ay Tacos to be, it’s a place where, even though we are so far from home, we can feel like we’re back there for a little while. ❤️

Without further ado…

VIVA MÉXICO, CABRONES! 🇲🇽❤️

Your local Mexican,
Val Ayers

WAIT… because I need to talk about this. 🇲🇽

Mexico was JUST ranked the number one food destination in the entire world for 2026.

And when I say number one… I mean ahead of Italy, Spain, Japan, India, France… ALL of them. 😂🇲🇽

And honestly? I love this because people who aren’t Mexican sometimes think Mexican food is just tacos, burritos and nachos.

NO.

The ranking looked at things like our culinary history, regional diversity, street food, fine dining, ingredients, drinks, sustainability and cultural authenticity.

And THAT is exactly what makes Mexican gastronomy so special.

Because Mexico isn’t one cuisine.

You can go from Baja California to Oaxaca, Yucatán, Jalisco, Puebla, Michoacán… and you’re going to find completely different ingredients, techniques, dishes and traditions.

We have Indigenous cooking traditions that have been passed down for generations.

We have corn, chiles, cacao, vanilla, beans, tomatoes, avocados…

We have mole. Birria. Cochinita pibil. Tlayudas. Seafood. Tamales. Pan dulce. Mezcal. Tequila.

And that’s not even scratching the surface.

So when I saw that Mexico was ranked #1 in the world for food in 2026, I was like…

FINALLY. 😂

Because Mexican gastronomy deserves that recognition.

And as a Mexican who grew up in Baja California and is now bringing my food to Maine…

Yeah… I’m going to be talking about this one. 🇲🇽❤️

Mexico isn’t just a food.

It’s an entire gastronomic culture.

Somebody dropped off this HUGE molcajete outside the restaurant and I don’t even know who it was 😭😂

But honestly… I could cry. 🥹 Like, I just wanna OPEN ALREADY!!! 😭😭

Every little thing that gets brought into this place makes it feel more and more real. We’re so close!!! 🇲🇽🌮❤️

God really has been in every step of this journey. 🙏🏼 #

Houlton, have patience… I think soon we’ll be giving you some AWESOME news! 👀❤️

But in the meantime, of course, I still go to Houlton all the time because I love it there! Jia was absolutely the BEST with the girls ❤️ We are so grateful to be surrounded by such amazing people. Gosh, who would have thought that food would bring people together like this?! 🥹❤️

Love yaaaa and miss you, Houlton! ❤️🌮

🌮✨ THE LITTLE AYERS LADIES CAME TO GET SOME NEW BLING ✨🌮

I had two of the sweetest little visitors today — Sophia and Oliva Ayers came in with their mama, Valena Ayers, who some of you may recognize as one of the faces behind the very well-known Ay Ay Tacos! 🌮❤️

And these girls came prepared with their own beautiful 14k gold jewelry, so they hung out with me for a bit while everything went through sterilization and was ready to use.

The littlest Miss Ayers got her lobes pierced with the sweetest little 14k gold studs, while her 2-year-old sister got something I don't get to do every day — SECOND lobes! 🥹✨ Ear piercing at a young age is a tradition in many Mexican and Latin American families, so I thought it was really special getting to add that second little set for her. She chose the cutest 14k gold hearts with a tiny gem sparkling right in the center. 💛

And BOTH of these little ladies did phenomenal. Seriously, they handled everything so well and walked out with some beautiful new gold on those tiny ears.

Thank you so much, Valena, for bringing your precious girls in and choosing Pierced by Jia to take care of them. It was so nice meeting all of you today! ❤️

And if Ay Ay Tacos ever gets that restaurant opened here in town... just understand right now that you're going to be seeing my face WAY too often. 😂🌮 You can't bring those traditional tacos to my neighborhood and expect me to behave.

Thank you again, Ayers family! 🖤✨

❤️😭thank you !

Soooo… CARIBOU! 🥹❤️🌮

Today we got our keys, and rumor has it… we will be at the old Reno’s place! 👀

Yep… you heard that right. Ay Ay Tacos is coming to Caribou! 🌮🔥

And honestly, at this point, with everything happening with the renovations in Van Buren, I think this might happen sooner than we expected. 👀

We might just surprise you within the next few days… 🤭❤️

Thank you, thank you, THANK YOU! We are beyond excited for this next chapter.

And I have to give a HUGE shoutout to my husband. ❤️ He has been more than a blessing throughout this entire journey my biggest supporter, my partner, and an amazing investor who has believed in me and this crazy dream from the beginning.

Thank you, babe. I love you today, tomorrow, and forever. ❤️

And to Aroostook County THANK YOU. 🥹❤️

Thank you for giving us the opportunity to serve communities all around the county. Thank you for opening your doors, your hearts, and your towns to us.

We don’t take that trust lightly.

Like I always say…

THE SKY IS THE LIMIT. 🚀🌮

Thank you, God, for every opportunity You continue to put in front of us. Thank you for allowing us to grow, create jobs, serve our communities, and be part of the towns that have welcomed us with open arms.

Amen. 🙏❤️
