Orlando, ready to escape to Spain for a night? 🇪🇸🍷
We’re thrilled to announce our first official wine dinner since returning—Passport to Spain—happening August 30 in the beautiful upstairs space at Femme Du Fromage!

This will be an intimate chef’s table experience for just 12 guests, featuring a 4-course Spanish-inspired menu by Chef Chris of Culinary Services, paired with 5 curated wines selected by our own Mary Montalvo of Decant Wine.

Expect bold flavors, vibrant pairings, and a cozy, communal setting that feels like a night in Barcelona with friends (minus the jet lag). Chef Chris wowed a sold-out crowd at his recent pop-up at Digress Wine—we even had Spaniards in the room who gave their full approval, especially of the Tortilla Española!

🙏 We are sending all our positive vibes to all our local wineries who are on the watchful eyes of freezing temperatures. This can be devastating to vines as bud break has started.

🥶 A freeze can harm the delicate young shoots of plants. If the main shoots get damaged from the cold, the backup buds may grow instead, but they often produce fewer fruits, which means less yield overall.

🌈 Let's all send them some good and positive vibes for tonight.

🥂 Today, it's Riesling Day, and we are celebrating with an Australian dry riesling perfect for this gorgeous spring weather!

🍇Most people associate Riesling with a sweet German varietal, but there is so much more to it! It is the darling grape of sommeliers because of its great diversity: from dessert wines (Eiswein) to sweet, medium dry, bone dry to sparkling or still wine, there is something for everyone!

🇦🇺Australian rieslings are one of our favorites, and this winemaker is one that we consistently revisit and adore. We will of course feature at The Wine Collective shop () for your enjoyment and will be part of our Riesling wine flight program so you can discover the different shades of the varietal!

Even when Australia is usually associated with warm climate varietals such as Shiraz or Grenache, their rieslings are world-renowned and planted in the higher elevation sites or the coast.

⛰️ Eden Valley, located in the southwest corner of South Australia, is a fairly new wine region. Their first commercial bottling was released in 1975!

Eden Valley is also known as one of the most remote growing areas in the world! Here, riesling thrives and brings elegant wines, perfect to introduce to friends looking for something fun, new, and exciting.

📝Pewsey Vale Notes: On the nose, it's a wonderful blend of white flowers with some lemon and lime.

🍋 On the palate, an explosion of grapefruit, some tropical fruit, and, of course, the lime flavors translated from the nose. Nice soft acidity, which translates into a wonderful minerality that makes this wine worthwhile. Perfect if you prefer cellaring your wines or just to drink now.

🦪Some nice oysters, seared scallops, or even some Thai Food will be great pairings for this wine.

♀️Happy International Women's Day! We have so many women in the wine industry inspiring and paving the way, and we are so proud to call so many of them friends.

🌸Here are some of our mentors at The Wine Academy that we are so proud to call friends as well.

🍷Alessandra Esteves , DIPWSET- Founder of Florida Wine Academy. 🥂Needless to say that without her mentoring and constant support, NCWA wouldn't exist today. I am beyond thankful that life put this awesome wonder woman in wine in my path!

🍷Elizabeth Schneider- Creator of Wine for Normal People Podcast and book. She was vital during 2023 providing mentorship while trying to find our way in the wine world.

🍷Amanda Wittstrom- Founder of and Full Cup Solutions. This year, thanks to her involvement and support, we were able to learn more about what it was the path to follow and were so glad to finally meet with her in Paso Robles!

🍷Lauren (Owner of Pleb Urban Winery)- Truly, without her support and partnership, the last year of the Academy wouldn't have been possible. Always eager to listen, eager to help, and simply leading the right way in the wine industry in the Asheville area. Without her any of our classes, sessions, and events wouldn't have been possible. Even now helping us with our wine shop. We are truly thankful for all her help and advice.
