The Chop Shop Butchery Asheville's first whole animal butcher shop featuring meats from locally sourced farms who are commited to supplying sustainable meat
(376)

At The Chop Shop Butchery, we want you to feel good about the meat you eat, and not just because it’s delicious. It’s your right to know where your food comes from, and that’s why we only source from all-natural, sustainable, and ethical local and regional farmers who never treat their animals with antibiotics, hormones, or feed them animal by-products. Our small, independent shop has direct relationships with farmers so we’re able to tell you the specifics about each cut of meat we carry, and you can be confident that you’re only getting the best quality each and every time. From our custom cut meats to fresh smoked sausages, charcuterie, and more, we’ll find just what you’re looking for with the personal touch of a neighborhood meat market.

🥺ROB JONES has been the heartbeat of our retail shop since day two. He’s the one who has kept things MOVIN’ & GROOVIN’ over the last 10+ years. And he’s one of our best friends. Rob has built one hell of a team at 100 Charlotte St.

We’re SAD to see him step away from the daily rigors of managing WNC’s best butcher shop for 9 years running…But we are PROUD to see him go take care of his family and himself.

Swing by today- have an oyster with guy (on the house, of course!) and wish him luck.

Cheers, Rob! Thank you!❤️🍻

🌭Do you know where YOUR hot dogs come from?🌭

A special thanks to our good friends at for all of the help over the years! They’ve been blending our herbs and spices for many years now- that’s one of the many things we do to set us apart from the rest. Custom blended fresh herbs and spices in all of our food.
