Spätzle or "Little Sparrows" is a tiny dumpling similar to pasta or gnocchi. They're named as such because they resemble sparrow birds flying in the boiling water where they're pre-cooked before getting seared up in a pan with butter.
We serve our Spätzle with many seasonal vegetables and accoutrements including warm apple sauce, a creamy farmer's cheese, caramelized onions, tangy pickles, and micro greens.
This is a vegetarian staple on our menu or can be enhanced with house-made cured meats (the sausage is pictured).
It's the perfect rainy day meal or a wonderful sunny afternoon entrée. Be sure to stop in and see it's seasonal preparation soon!
