Long time no talk!.. Cooking season has been BUSY. It’s been quite the learning curve trying to perfect the new equipment, which means a lot of hours and late nights. And somehow we all still like each other (sort of).

So far we have produced eleven 55 gallon barrels of maple syrup, and will finish number 12 and 13 today. Our goal was to hit double digits so it’s been a great first year!

Once the sap stops flowing and we’re all done cooking, we will get some syrup bottled and available for all you wonderful people. Keep an eye out in the coming weeks.

Our first ever finished product happened at 10:32 PM last night!!

Tucker is testing the syrup’s sugar content while it draws off the evaporator, ensuring it is cooked just right.

We couldn’t be more excited seeing all the hard work come together.

🥁 🥁 Drum roll please... River Rich Maples LLC is OFFICIALLY A LICENSED FOOD PROCESSOR!!!

This means that our facilities have exceeded the sanitary and safety requirements of the Wisconsin Health Department. Assuring that every bottle of syrup we produce will be of the highest quality.

This is HUGE news for us and we wanted to make sure to share with you all.

Now it’s time to get to work.

2,300 taps down in 2 days. We’re all tapped out and ready for the warmer weather ahead. The trees should be running soon! ☀️ ☀️

The crew has been BUSY! With the warmer temperatures, we were able to make a big push this weekend to get our operation close to finished... the shack has come a long way, and it’s been well worth the work.

In the coming week or so we will begin to tap trees and run a test boil with our evaporator, and we’re looking forward to showing you guys more of the process.

Our new baby we picked up last weekend and made the trip all the way back to Athens with!

What is it??? A 2.5 x 10ft high-power, wood fired evaporator. This bad boy is what we’ll be using to cook down thousands and thousands of gallons of maple sap to make our precious syrup.
