Sunshine Hollow Pecan Fruitcake

The WORLD'S BEST FRUITCAKE attested to by many
long time customers. Pecan Fruitcake is baked at our small Bakery in a true Tennessee Hollow
where Moonshine was made in the early 1900's. I am a veteran of the
U.S. Army in 1967-68. There are manyFruitcakes on the market
but few meet the standards that we set for ours. We take no shortcuts in either ingredients, mixing, panning or baking our
cakes.

The primary ingredient is Pecans from the Southeast US. Our batter
is all natural with Creamery Butter, Honey, Dark Rum and Fresh Cracked
Eggs being the primary ingredients. We then incorporate this batter with Glace
Pineapple and Cherries, Coconut and Dates all mixed by hand in small batches. This combination makes for a wonderful flavor and luscious moistness. Most major companies machine mix their ingredients together in big machines
while ours are hand mixed in small batches. We could
bake our cakes quicker at higher oven temperatures but we would sacrifice
moistness. So our cakes are baked at very low temperatures for over two
hours. Due to our hand panning, secret batter formulation and low temperature
baking our cakes decorate themselves. You have to try one to really see how
good they are.
