Chinese Toon (Toona sinensis) – 香椿
Fresh Spring Shoots
Chinese toon is a seasonal vegetable popular in Chinese cuisine. The young leaves have a unique garlic-onion aroma with a rich, nutty flavor.
It is considered a spring delicacy and is only available for a short time each year when the new shoots emerge.
Chinese toon pairs well with eggs, tofu, noodles, and rice dishes.

Classic Recipe: Chinese Toon Scrambled Eggs (香椿炒蛋)
Ingredients
• 1 cup chopped Chinese toon leaves
• 3 eggs
• Salt to taste
• 1 tbsp cooking oil
Instructions
1. Briefly blanch Chinese toon in boiling water for 30 seconds, then chop.
2. Beat eggs with a pinch of salt.
3. Heat oil in a pan and scramble the eggs.
4. Add chopped Chinese toon and stir briefly until fragrant.
5. Serve with rice.
