*The BLOOMING OF SPRING*The shedding of the old & the renewing of life from the depths of the earth awakens. What a joy to have eyes that see & ears to hear tree symphonies from the passerines dotted among the branches that raise their songs of awakening in competition. Oh! What a time to be alive!

Now that spring is around the corner & we have started planting the garden, I’ve been reminded of the wonderful time we had forgaging with Steve & Charles .It was amazing to learn about the various wild growing plants(some of what we considered weeds here in the South)that are actually edible.Seeing the new plant life popping up in our fields with new eyes & knowledge to bring to our table, has us excited for new flavors & dishes.If you happen to be in the Cotswolds of England, plan a trip to meet our friends at the cookery school❤️

*Farmers Cheese*(1/2 gallon)
Fresh whole milk-BRING to 185-190 degrees stirring often as not to scorch(tiny bubbles develop around the edges)
REMOVE from heat & STIR in 1/4 cup of white vinegar or lemon juice(I use vinegar)
Let SIT for 15-20 minutes(the curds and whey will separate)
DRAIN through a cheesecloth(chickens love the whey)for about 30 minutes
ADD 1-1/2 tsp as you crumble the cheese
STORE in frig…mine doesn’t last long!! It’s so good!!
