Healthy Blueberry Cottage Cheese Bake

Ingredients:
2 cups cottage cheese
4 large eggs
1 cup rolled oats
1 cup fresh or frozen blueberries
1/2 cup honey or maple syrup
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
Optional: additional blueberries for topping

Instructions:
Step 1: Preheat Oven
Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.

Step 2: Blend Mixture
In a large bowl, combine cottage cheese, eggs, honey or maple syrup, and vanilla extract. Mix until well combined.

Step 3: Add Dry Ingredients
In a separate bowl, mix rolled oats, baking powder, cinnamon, and salt. Gradually add this mixture to the wet ingredients and stir until just combined. Gently fold in the blueberries.

Step 4: Bake
Pour the batter into the prepared baking dish. If desired, top with additional blueberries. Bake for 35-40 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.

Step 5: Cool and Serve
Allow the bake to cool in the dish for about 10 minutes before slicing. Serve warm or at room temperature and enjoy this nutritious treat!
