So much wind lately! Usually the foliage lasts much longer than it is doing this year. Right now most of the trees here on the mountain are pretty bare. Still, autumn remains one of my favorite times of the year. It's such a relief after all of that buggy, muggy summer heat. Pumpkins are everywhere now and winter squashes are being sold in every grocery store around here.
Take advantage of all of the heirloom pumpkins and winter squashes you find in the stores and save their seeds instead of tossing them into the trash can. Heirloom means those seeds are not genetically modified. You can dry them out by placing them on a paper towel for a week or two, then wrap up that paper towel and it's seeds and place it into a plastic baggie. Put the baggie in your refrigerator 's vegetable crisper drawer and leave it through the winter. Plant your seeds next spring.

Some great holiday meal ideas might be marinated or smoked roast pork, baked ham, Chicken Kiev. Using skinless, boneless chicken breasts, pound each one into a flattened shape. Stuff each flattened breast with regular stuffing... or a seafood stuffing.... or a favorite veggie. Carefully roll up, tucking the ends underneath. Use toothpicks to secure them well. Google Chicken Kiev for complete instructions. So easy to make! LOTS of recipes on the internet too!
You can also stuff your Chicken Kiev with drained, canned fruit such as peaches, apples, pears. If you like the idea of a savory fruit filling and not a sweet one, drain and rinse your canned fruit, then mince up an onion (for me, the bigger the better) and mix it into your canned fruit. Onions go great with this dish, especially when apples are used as the filling. You can season the chicken, stuff and bake it or you can season it, stuff, then carefully bread it with Panko crumbs before you bake it. If you choose not to bread it, then brush some melted butter on top of each rolled up breast and then season it. You can also place some slices/pieces of whatever fruit you are using as a filling, on top of the Chicken Kiev to help keep the tops moist if you choose not to use breading.
Some families skip the meat platter idea entirely and focus on homemade lasagna. Others add deviled eggs to their holiday menu. (just because summer is over doesn't mean you have to go without such a delicious side dish!) Don't you know, the very best eggs are those right from your local farm!
