Daytona Speedway (you could hear it when the cars were running), barbecue wasn’t a regional thing – this was Florida after all. There wasn’t a “Florida” style. It wasn’t about oneupmanship and trying to have the next trendy dish. The focus was on serving good food to hungry people. In the years since, things have changed. NASCAR is now big business, and unlike my grandfather, we got to travel and experience different cultures and foodways. Just as my grandfather brought his passions and experiences to barbecue, we’re doing the same – paying homage to him and to cooking traditions from around the world. For now, we’re focused on private events and parties. Pulled pork or whole hog. Smoked barbecue or Cuban lechon asado. House-made Spanish chorizo or Chinese yang ruo chuanr. Traditional side dishes.
