Being from the south, biscuits aren’t just nice to have... they are a necessity! These are as close to a southern biscuit I’ve had since going low carb and ditching wheat flour.

Looking for a cheddar bay style biscuit? Add 1/4 cup shredded cheddar cheese, 1/2 teaspoon garlic powder and 1 teaspoon dried parsley flakes to dry mix and then continue with recipe as written.

Be sure to brush tops with melted butter when they are hot from the oven. If you haven’t tried Kerrygold butter... DO IT! It is the BEST!

When your sweet tooth cry’s out for something but you don’t want to spike your blood sugar, make this super easy candy recipe in less than 15 minutes!

It’s so easy! Just melt some “no sugar” hazelnut chocolate spread (I love Choczero brand, it’s a keto-friendly Nutella) and some sugar free milk chocolate chips (Lily’s brand) in the microwave, stir and then add in some chopped hazelnuts. Use a spoon to drop the yummy mixture into some mini muffin paper liners. That’s it! It’s that easy to make some quick HEALTHY candy! Only 83 calories and 1 net carb per piece!

My daughter was talking about having a brunch themed party.... which got me thinking about brunch foods.... which got me in the kitchen to whip up some low carb sausage balls!

These are made with almond flour instead of the carb loaded biscuit mix they are usually made with.

The recipe made 24 so I’m going to put the leftovers in the freezer to heat up in the microwave when I want one of these tasty little things!

Today marks 120 days of my new way of eating. I went keto and have not cheated one time. Now that’s unheard of for me when I “diet”.

What’s different this time? I’m not dieting! I’m changing my eating style. I’ve dropped the “American Standard Diet” and have adapted my eating habits to the KETO LIFESTYLE.

Not diet... lifestyle! Lifestyle, as in, this is how I eat now. The “diet” mentally doesn’t work for me! If you say I can’t have candy, cakes, and cookies, I want more candy, cakes, and cookies!🤣

Following the keto lifestyle, I MAKE and EAT all those yummy treats! They just aren’t full of sugar (sucrose/fructose) that wrecks the body!

I’ve researched different keto-friendly flours and sugars... and there’s plenty of them! I’ve experimented with different savory and sweet recipes... thank God for bloggers and Pintrest! I’ve tried things I’ve liked and things I’ve loved. In 120 days only one thing was inedible and that was due to the “brand” of an ingredient that I bought, not the ingredient itself. (Oat Fiber is amazing, but not the Anthony’s brand. Their Vital Wheat Gluten is good, though.)

Got a sweet tooth and love bread? (That’s me! 🤚) I can make great “keto friendly” garlic cheese biscuits, jalapeño skillet (corn) bread, and wonderful sweet muffins, cakes, and cookies! I’ve even made peanut butter cup candy that I think is better than the one you buy! And it is full of protein and healthy fats and most importantly, it doesn’t spike your glucose!

This is working for me! What works for you when you are trying to be healthier and lose weight?

It’s a new month and time to update my weight loss calendar.

🥁Drum roll, please!🥁 I’m down SEVEN+ pounds this month! It’s been 116 days and I’ve dropped THIRTY-TWO pounds!

I don’t like having my picture taken (because of my weight) and I normally wouldn’t post a picture of myself but I want to document where I started and where I am now.

So far I’ve only changed my diet. This month I’ll be adding exercise. Wish me luck!

Dinner was delicious tonight! Ribeye steak and zucchini squash from the grill with some leftover pan seared fresh green beans, bacon-cauli-and-cheese casserole, and a garlic cheese biscuit with butter.

This is keto! I ate all that (and my lunch) and still stayed within my macro/calorie limit for the day.

I’m loving the keto lifestyle! I never feel hungry and never feel deprived! And I never consume more than 1350 calories a day!

It’s the weekend and in my house, that means it time for BRUNCH!

I’m always searching for new ingredients to use in my keto kitchen so it’s no surprise that I have (not one, but two) keto pancake/waffle mixes in my pantry. I thought it was time to pull one out and whip up a batch of pancakes!

I always like to doctor up any box mix, so today I did just that! I added some more sweetener, a bit of cinnamon, and vanilla to the mix. I sprinkled a little cinnamon/sweetener mixture on top when I served them. (Next time I’ll add a little extra baking powder to increase the rise of the pancakes.)

My taste tester gave them a 9 but I think they were more of a 7. I’ll need to do a little more tweaking to up the score. However, I must say that brunch was really good and I have high hopes for this pancake mix!

When you know there will be sweets at work to celebrate a coworker’s birthday, you make yourself a healthy sweet treat of your own!

They had cheesecake and chocolate covered strawberries. It looked good but I wasn’t mad... I had keto friendly chocolate covered peanut butter bars!

It was like having a Reeses Peanut Butter cup... minus all the carbs and inflammation causing sugar!

I checked out a couple of recipes on Pinterest and used them as a guide. It’s a combination of peanut butter, butter, allulose sweetener, vanilla, sea salt, and peanut butter powder for the base. I used milk chocolate chips and some cocoa butter melted together for the topping. I downsized the amount I made because I knew a little of this yummy candy would satisfy my sweet tooth.

The keto lifestyle is easy to follow when you arm yourself with these delicious alternatives!

Looking for something easy and tasty that’s quick to put together after a busy workday? Look no further than this low carb Tamale Pie!

As always, I love to tweak a recipe to make it a little more “me”. I added more spices (cumin, chili powder, garlic powder, and pepper) along with some diced onion and bell pepper to the taco flavored hamburger base. To the cornbread topping, I added shredded cheddar cheese, garlic powder, and diced jalapeños.

Serve this yummy Mexican dish with shredded lettuce, diced tomatoes, guacamole, and sour cream.

Who says you can’t eat donuts and lose weight at the same time! It’s called having your cake and eating it, too! It can be done.... if you do it the right way!

These cinnamon donuts have a warm spicy interior and a sweet crunchy coating. They are delicious and so easy to make!

Don’t worry if you don’t have mini donut pans, make mini muffin bites instead. They’ll be just as delicious!

I love making a nice hardy brunch on the weekends because it means I’ll only eat two meals that day and that gives me plenty of macros still available for other yummy (weekend) treats! (Like 3 donuts for a mid afternoon snack and a cheddar bay biscuit with dinner... all keto friendly, of course!)

I wanted something extra special with our brunch today so I whipped up some easy coconut fathead bagels. What? Bagels on keto? Yes, indeed!!

These bagels are carb friendly... only 2.9 net carbs per serving. (I had two... they were that GOOD!) I mixed a little homemade (no sucrose added) blueberry fruit spread to some cream cheese for my regular bagel and plain cream cheese for my everything seasoned bagel. You’ve got to try these! They are delicious!

One thing I have missed since going keto is croutons on my salads. I know it’s not a big thing to miss but still, I miss those crunchy, toasted, garlic-seasoned pieces of bread!

Well no more!

I mainly eat foods I prepare from scratch, but keto sandwich bread is the exception. I haven’t invested any time into homemade bread because, to be honest, I really didn’t eat much of it prior to going low carb.

I do enjoy the occasional grilled ham and cheese sandwich and I would like to make a keto friendly Monte Cristo sandwich. (Which I think is actually quite doable!) But other than that, I don’t really need sandwich bread. So a loaf of this bread will last me two weeks and then it goes out of date... and at the end of the two weeks, I usually have several pieces left.

I try not to waste food. (After all, it’s not cheap!) So I’ll either make bread crumps for something like keto meatloaf or I’ll freeze the leftover bread. (Thanksgiving is coming and I’ll need a few slices to go in my dressing.)

This time I decided to make CROUTONS with the left over bread slices! It was really easy and so much tastier (and healthier) than any crouton you’ll buy from the grocery store!
