Is it the magic of Knockshee, the fairy mountain, or is .carty.12 a whiskey making wizard? Either way, this is another stellar example of what stunning whiskies are made at !

This gem is 75% Irish Grain and 5% Malt Irish distilled in Ireland, with the remaining 20% Irish Malt distilled in Northern Ireland. The combo of the single grain, and single malt started in ex-bourbon and then were blended and transferred to sherry butts. Then, Wizard Brendan married it with another ex-bourbon single malt before finishing it in tequila casks.

Notes of brown sugar (like freshly made wet brown sugar) and yellow granny butterscotch candies fill the nose, with the palate rich and thick with freshly cut wood (like pine trees) and saddle soap, followed by a very herbaceous note of freshly picked herbs from a just rained on forrest floor. Gives me the shivers!

I know I’m like a broken record, but if you haven’t tasted anything from Killowen, I encourage you to change that ❤️

and I just had the pleasure of tasting .rum and it was so good I had to tell you about it!

Aged for 12 years in ex-bourbon casks in the central province of Nakhon Pathom in Thailand, this viscous and additive and coloring free rum is a viscous treat on the palate!

The nose is over ripened banana and prune twizzlers, with a waft of leather and saddle soap, followed by candied apple with nuts. The palate sings all of those notes straight into your gullet with more banana mash and leather. The finish is dry and lovely and just completes this tasty little treat in the perfect way!

Rum is something I’m still exploring and to have the opportunity to taste this is pretty freaking cool, and cements the fact that I have a lot more exploring to do. ❤️

I fell in love with The Echlinville Distillery on my trip with ! Located on the stunning 23 acre Echlinville Estate, this family owned, grain to glass distillery is making some seriously exceptional whiskies. Every single drop I tasted I was just enamored with from the farmy vanilla Greek yoghurt new make to the lush and hella viscous Tawny Port cask I had the pleasure of burgling! They grow all of their grain in Portaferry and even go as far as to floor malt said grain and send it on a low and slow journey of distillation.

On top of their Echlinville portfolio, they also brought back Dunville's Irish Whiskey which fell silent in 1936. I had the pleasure of tasting a few of these and they are all stunning! Dunville’s is sourced liquid + their own spirit and it undergoes an extensive finishing process. And extra bonus points is that it’s completely transparent!

And lastly the Old Comber Whiskey brand has too been brought back to life after 70 years of silence, which is pot still deliciousness and one you should definitely try if you find it!

With the distillery crafting their own exceptional whiskies (and gin and poitin!) they too have brought back some of the lost whiskey brands of Ireland! So they are not only preserving the rich distilling history of Ireland, but they are also making a very rich history of their own.

Please go out and try any of these remarkable whiskies from and , I promise you won’t be disappointed! And if you find yourself in Ireland, go visit!

This has been such an incredible week learning about the magic of Irish whiskey. As if my love for the category and people could possibly grow more, this week has filled my heart with so much gratitude and joy. This community is truly so special, it’s hard to put into words. More to come on these! Massive thanks to the team and the one and only ! I’m leaving with a very full heart. ♥️
